It’s been a long weekend of backpacking and now it’s time to relax. We did 6.2 miles Saturday and finished off 3 more miles this morning. I will be doing a follow up trip blog and Neil and I are going to do a He Says, She Says blog post on gear so standby and goodnight.
My First Trip To Philadelphia (that wasn’t to the airport), sadly not for HLS, however we will be with two of our good friends.

Anywhere There’s An Airport I was first introduced to this blog via Kristen’s guest post over at PB Fingers and I fell in love with the blog instantly. Kristen writes about her life which involves living in Madrid my old home for 2 months the summer of 2004. It is a place I have always wanted to travel back to but haven’t made it back so until then I live vicariously through Kristens posts.
Pure2RawI have been reading the Twins blog for awhile now and I just love how it has developed and evolved. I love the features on their life, workouts and recipes. If you are looking for some really great healthy recipes both raw and cooked visit their blog.

Five Things I Am Loving:
Running- I am addicted!
The Broads– We have Sirius/XM in our car right now and I listen to them every morning on my way to work. They are hilarious.
Salads- I have a love hate relationship with salads. I either want them all the time or I don’t want them at all. Currently we are in love.
Dark Chocolate with Sea Salt. Addictive. period.
My Husband. I know I love him all the time but right now I just wanted to express my love for him because he has been ridiculously supportive during the crazy time. XO.

I have finally stepped back into the kitchen and I am doing some real cooking again! Last night I was in the mood for something warm and creamy. I debated making a pasta with “cream” sauce and then I remembered I had coconut milk and curry leaves so I decided to make a curry pasta dish that ended up being so delicious; I can’t wait for lunch today!
Serves 4
Ingredients:
2T Canola oil
1t Mustard seeds
1t Fenugreek seeds*
1/2 cup Curry leaves*
1/4t Turmeric
1/2t Chili powder
1t Curry powder
1 medium onion, diced
1 green chili, minced
2 cups green cabbage, chopped
3/4 cup Red lentils
1-15oz can Diced tomatoes (no salt added)
1-15oz can Lite coconut milk
1/4t Ume plum vinegar or red wine vinegar
1/4-1t Cayenne pepper (optional)
Salt and pepper to taste
4 Servings of Orecchiette or other pasta, cooked according to directions
Directions:
In a large saute pan heat the oil over medium-high heat. Add in the mustard seeds and fenugreek seeds and toast until they start to pop, about one to two minutes; then toss in the curry leaves and cook for one minute. Stir in the curry powder, turmeric and chili and stir to combine. Stir in the onions, chili and cabbage and saute until the vegetables start to soften and are lightly browned. Stir in the red lentils and tomatoes and then the coconut milk. Bring to a boil and then reduce to a simmer for 15 minutes. While the lentils are cooking cook your pasta according to the directions.
Stir the vinegar and cayenne into the lentil mixture and add salt and pepper to taste. Cook for 5 more minutes or until the lentils are softened. Once the lentils are soft stir in the cooked pasta and serve!
*If you do not have curry leaves or fenugreek seeds you can omit them; the dish will not taste the same but it will still be delicious. Feel free to add an additional 1/2 to 1 teaspoon of curry powder.

Wow this has been a crazy month! I’ve been bogged down with a huge work event that has been dominating my life but now it is finally over (WAHOO!) and I can get back to normal. That being said on top of my day job I also have my health coaching job which has really been doing amazing. I have a few new clients and I have a bunch of workshops going on this summer; the first one is next week! In addition to working one-on-one with clients and doing workshops I am also working on setting up a few podcasts and other healthy living materials. I also am back at IIN doing the immersion program, which so far is wonderful. I know things are sounding crazy already but they get crazier.
I recently was contacted by a friend who writes for Ecorazzi asking if I would be interested in attending and covering Wanderlust Vermont. UMMMMM hello of course I would be! I have actually been talking about Wanderlust to my husband for months now and had been debating going so when I was approached to cover the event I jumped at the opportunity. The Hubz is going to head down to Stratton with me so he can take advantage of the hiking and he will also be attending one day of Wanderlust, my anniversary gift to him. So some of you are probably wondering what the heck is Wanderlust?
Wanderlust is a festival combining the holistic experience of a yoga getaway with the swagger of a rock show.

Among all of this chaos the Hubz and I are still going strong with our running and have some really S.M.A.R.T. goals around what we would like to do and achieve. We are just finishing up C25K and we are going to then work on doing two 30 minute runs and one long run (starting at 2.5m and increasing by .5 until the race) per week until our 5k in July. Following the 5k we are planning a 10k in September and will be using the Hal Higdon training plan; if we like his we will use it to train for our half as well. In other active news the Hubz and I are gearing up to do some backpacking on the Long Trail this summer which should be a lot of fun. We had planned on doing an overnight trip this weekend but we might have to reschedule do to rain. Do you hike? Are you into backpacking?
Lastly lets talk about food. I haven’t been doing much for cooking lately due to the crazy schedule I have had. Most of our food has been pretty boring and basic like greens, beans and grains or salads, however this is all going to change soon! I have plans to start working on another e-book (probably won’t be looking for testers until August) and also working on some really great healthy recipes for the blog.
Well that is what’s going on with me- what is new and good with you?
Blogging. I have been a busy bee and blogging has unfortunately taken a backseat. I am in the midst of working on a number of personal and work related projects one of which will be over in two weeks and than means back to regular blogging and daily posts.
Green Smoothies. It’s finally starting to look like summer here and with summer comes yummy fresh foods. One thing I have been missing lately are green smoothies & green monsters– I think it’s time to make a come back.
Hiking. Again one of those summer things that we hope to do a lot of this summer. We are even going to pump it up notch and go backpacking (do some over night hikes) on the Long Trail. So June please come soon so I can blog more, hike more and work (a little) less.
Yoga. Lately I have been so dedicated to my C25K and strength training that yoga has taken a back seat. At this point my body hates me because it is getting so tense – it is screaming for yoga and I should probably listen.
