[Recipe] The Best Vegan Sandwich | #TTLA

Hello Friends! I’m here to share the news you can now find the vegan friendly #TTLA at Whole Foods Market!! This delicious sandwich creation inspired this viral video  and has everyone (including me) wanting one.

But wait are you asking yourself um….Lindsay what is the #TTLA? Let me break it down for you: The Whole Foods TTLA sandwich  is created by layering Lightlife Organic Fakin’ Bacon Tempeh, tomato, lettuce and avocado between two pieces of ciabatta slathered with a vegan garlic aioli.

I know not all of you have Whole Foods nearby or you simply prefer to make your food at home so I’m here to share my version of the TTLA with a little extra flare. My version has a creamy herb mayo, candied tomatoes aka quick roasted tomatoes that taste like candy and smashed avocado. You could go for slices of avocado but I prefer smashed because there is nothing I hate more than a sandwich sliding apart because of slippery avocado slices.

For my version you will need:

  • Lightlife Organic Fakin’ Bacon Tempeh
  • Sourdough Bread, Sliced
  • Lettuce
  • Candied Tomatoes
    • 1 pint Cherry Tomatoes
    • Salt
    • Pepper
  • Herb Mayo Spread
    • Vegan Garlic Aioli
    • 1 Tablespoon Chopped Italian Parsley
    • 1 Tablespoon Chopped Chives
    • 1 Tablespoon Chopped Basil
  • Smashed Avocado
    • 2 Ripe Avocados
    • 2-3 Teaspoons Lemon Juice
    • Salt & Pepper

Start with preheating your oven to 425F. Slice the tomatoes in half and place cut side up on a baking sheet. Sprinkle with fresh cracked pepper and himalayan pink salt. Bake for 15 minutes.

While the tomatoes are baking work on putting together the remaining elements of the sandwich.

In a small bowl mix together the garlic aioli and herbs; mix until incorporated.

In a another small bowl mash the avocado with the lemon juice and salt and pepper to taste.

Like your bread crunchy? Now it the time to toast it.

In a skillet add just a touch of oil to prevent the Fakin’ Bacon tempeh from sticking and pan fry until lightly brown on both sides. If you prefer you can also place the Fakin’ Bacon on a sheet pan and cook in the oven.

Once the tempeh has been browned and the tomatoes are sweet like candy it’s time to put your sandwich together. Slather one side of your bread with the herb mayo spread and the other half with the smashed avocado. Top the avocado side with a layer of candied tomatoes and top the herb mayo spread with your favorite lettuce greens. Now it’s time to add the Fakin’ Bacon tempeh right on top of the tomatoes and then put it all together and enjoy!

If you are crunched for time you can use freshly sliced tomatoes or sundried tomatoes instead of the candied tomatoes.

Feeling a little cheeky? Add a layer of sliced dill pickles, tangy saurkraut or your favorite spicy peppers

The Ultimate Vegan Sandwich

Last night I had a big craving for a big yummy vegan sandwich. While I was trying to figure out what my ultimate vegan sandwich would be I decided to get some opinions from my tweeps:

Although you all had some great suggestions this is what our ultimate sandwich looked like:

Layer 1: Cashew-Chickpea Cheeze
Layer 2: Garliky Sauteed Kale
Layer 3: Sauteed mushrooms, onions and zucchini
Layer 4: Sauteed Tempeh
Layer 5: Tomato Slices
Layer 6: Sprouts
Layer 7: Avocado
All squished between two slices of local crusty ciabatta.

One of the best sandwiches ever and guess what there is more for lunch! YUM!

Cashew-Chickpea Cheeze Spread

  • 1/4 cup cashews
  • 1/2 cup chickpeas, drained and rinsed
  • 2 heaping tablespoons nutritional yeast
  • 1 teaspoon sweet white miso
  • 2-3 tablespoons of water

Throw in a food processor and blend!

Dining Locally & Holiday Traditions

The Hubz and I spent Saturday morning doing a little last minute Christmas shopping and stopped in at Healthy Living to pick up a few groceries and for lunch. Healthy Living is one of my favorite places to eat because they have a great salad bar, hot bar and really great vegan sandwiches.  We decided to get sandwiches for lunch I went with roasted tempeh, with all the veggies (too many to list), vegan mayo, roasted garlic jam all on a panini.  The hubz went with the roasted tempeh, some veggies, garlic mayo also on a panini.

After lunch we did a little more holiday shopping at the mall.

Every year the Hubz and I head out to the mall and pick a child from the gift tree and head out to do a little shopping to pick up things on their card.  This year we decided to pick 2 children a 1 year old boy who was in need of clothes and trucks or learning toys and a 10 month old girl who was in need of clothes.  We picked up a few cute things for them.

After Christmas shopping we went to visit some of the Humane Society Kittens which I just wanted to take home with me. I hope someone adopts these furry friends soon.

Tempeh Reuben with Rainbow Slaw

Tonight I made the tempeh reuben from The Candle Cafe cookbook; I also made the vegan mayo to make the Russian dressing for the reuben.  I also made some rainbow slaw with the vegan mayo, white vinegar, palm sugar, salt, pepper, celery seed and mustard powder. I plan to serve these at my interview tomorrow.

Vegan Mofo #3: Autumn Salad and Tofurky-Avocado-Bac'n Sandwich

One of my favorite dinners lately has been my Autumn Salad and Tofurky Sandwich- yummy and hearty.   The Autumn Salad has green leaf lettuce, green apple, pepitas, raisins and maple balsamic dressing.  The gigantic delicious sandwich was yummy sesame wheat bread, vegenaise, avocado, tomato, lettuce, tofurky, tempeh bacon, and rice cheese which is then grilled to perfection!
