Veggie Skewers & Black Bean-Corn-Mustard Green Salad

Thursday night I had a crazy afternoon between a conference call, running, gardening and packing for our backpacking trip. So I decided to keep dinner quick and easy. I made veggie skewers with mini peppers, sweet onion and mushrooms; just toss with salt, pepper and olive oil and roast at 375F for 20-25 minutes. To go with the veggies I made a black bean and corn salad with mustard greens from my balcony garden.

Black Bean-Corn-Mustard Green Salad

  • 1T olive oil
  • 5 spring garlic, minced
  • 1/2 red onion, minced
  • 1 serrano chili, minced
  • 1-12oz bag of frozen sweet corn
  • 1-15oz can of black beans, rinsed and drained
  • 1 bunch of mustard greens, shredded
  • salt and pepper

In a large skillet heat the oil over medium-high heat; toss in the garlic, red onion and chili and cook for 3-4 minutes. Toss in the corn and saute until lightly browned about 5-8 minutes.  Stir in the black beans and mustard greens and cook until mustard greens are wilted.  Season with salt and pepper to taste.

Dining Locally: New Moon

At least once a week you can find me at New Moon Cafe blogging, working on school or enjoying a cup of coffee with the Hubz or friends. There are many coffee shops in Downtown Burlington but New Moon is by far the best for getting something healthy to eat, finding a table to work on and has the best free Wi-Fi.

The menu at New Moon includes sandwiches, salads, breakfast items, soups, quiche and baked goods. I really love their roasted veggie paninis but lately my favorite has been the create your own salad. My favorite combination is greens, artichoke hearts, mushrooms, carrots, chickpeas, cucumber and lemon dressing. There are three sizes of salad; the small is massive and they don’t skimp on the artichokes which are my favorite.

When it comes to beverages they have the best cold pressed iced coffee, wonderfully sweet and spicy chai lattes and their drip coffee is really delicious as well.

My only complaint about New Moon is that it isn’t open on Saturdays.

Vegan Mofo #3: Autumn Salad and Tofurky-Avocado-Bac'n Sandwich

One of my favorite dinners lately has been my Autumn Salad and Tofurky Sandwich- yummy and hearty.   The Autumn Salad has green leaf lettuce, green apple, pepitas, raisins and maple balsamic dressing.  The gigantic delicious sandwich was yummy sesame wheat bread, vegenaise, avocado, tomato, lettuce, tofurky, tempeh bacon, and rice cheese which is then grilled to perfection!
