[Recipe] Screw The Food Rules – Eat The Veggie Dogs

October 5, 2017 by Lindsay Ingalls Leave a Comment

This post was created in collaboration with Lightlife.

When it comes to eating I don’t have any major “rules”. I prefer to eat foods that are nutrient dense and nourish my body but there are times when I like to enjoy some pizza, fried foods and the occasional sweet. If you’re looking for nourishing bowl inspiration I post a new one on my Instagram or IG stories most days but if you are looking for something that is delicious but not so healthy read on.

When I was a kid growing up in Vermont (and not plant-based) we used to go to a spot called Charlie’s Red Hots. They had this hot dog that was basically the Vermont version of a Michigan dog. To be honest I don’t remember what it taste like 20+ years later but I thought I would go ahead and attempt to recreate this legendary hot dog but make it a bit healthier and plant-based. Of course it would only be appropriate to make this dog when my parents where in town to give it a try.

These dogs would be great for Fall camping trips or tailgating; simply make the sauce ahead of time and heat up when ready to eat. We enjoyed ours during a rainy trip to the Oregon Coast.

Okay, but lets get to it how were they? They were so delicious! Although they would have been better with a New England hot dog bun but the West Coast just doesn’t seem to stock the best kind of hot dog buns. Also these are best enjoyed with a great Vermont beer.

What did my meat eating, Charlie’s Red Hots loving parents think? Well as soon as my mom got home to Vermont she sent about 12 text messages desperately requesting that I get this recipe post live so they could make the sauce at home.

What is a food from your childhood that you love to recreate at home?

Psst: If you need a great place to stay on the Oregon Coast my friend Lisa’s #beachvibescottage is perfect– you can find it on airbnb plus use this affiliate link and get $40 to travel.

[Recipe] Vegan Crepes with Strawberries and Cream

May 2, 2017 by Lindsay Ingalls Leave a Comment

Disclaimer: This post was created in partnership with;KitchenIQ and So Delicious Dairy Free.

Mother’s Day is just around the corner and so I’ve been thinking about what I would want my hubby and kids to make me for breakfast. Since Neil is the pancake maker of the house (I burn them every time) my first thought was pancakes but really I don’t care that much for pancakes. So my next thought crepes. We never make crepes at home and rarely eat them out so they would be a fun treat. Bonus they are super easy to make so Neil could easily have the kids help him put it together!

These crepes are easy to make however they do take a little bit of time to sit and chill. That being said they are best for brunch unless eating breakfast 2+ hours after you wake up is your normal. For us breakfast is pretty much as soon as we roll out of bed so these are a perfect second breakfast or brunch.

Step 1. Mix up the batter.

Step 2. Make lemon-strawberry sauce.

Step 3. Make Maple Vanilla Cream.

Step 4. Wait and wait until your crepe batter is ready.

Step 5. Cook up your crepes and then promptly devour.

Continue below for the full recipe.

  2. 1/2 cup water
  3. 1/4 cup melted coconut oil
  4. 1 tablespoon coconut sugar
  5. 2 tablespoons maple syrup
  6. 1 cup all purpose flour
  7. pinch of salt
For Lemon-Strawberry Sauce
  1. 1 pint strawberries, sliced
  2. 1 lemon, juice & zest
  3. 2-4 tablespoons coconut sugar
For Maple Cream
  1. 1 cup unsweetened vanilla coconut yogurt
  2. 2 tablespoons maple syrup
  3. 1/4 teaspoon vanilla powder
Instructions
  1. Place all of the CREPE ingredients into a mixing bowl and whisk together until smooth. Cover and place in the fridge for 2 hours.
  2. While the crepe batter is chilling make the LEMON-STRAWBERRY SAUCE. Toss the sliced strawberries with the coconut sugar, lemon juice and zest; mix to combine. Cover and chill.
  3. For the MAPLE CREAM - place all the ingredients in a bowl and whisk together, cover and chill.
  4. 2 Hours Later....Heat a medium sized frying pan over medium-high heat. Grease the pan with coconut oil or vegan margarine and then pour in 3-4 tablespoons of the batter swirling to create a thin layer. Cook 2-3 minutes on each side or until they are golden. Once cooked top with berries and cream. Enjoy!
Notes
  1. I have not tested this recipe with gluten free flour but I would imagine it could work - if you do let me know if the comments below.
  2. You can use whatever plant-based milk that you prefer however I find that this cashew milk has such a great flavor that really adds to the flavor of the crepe.
  3. I used the KitchenIQ V-etched Better Zester!, GreenWhisk & Spatula (2 in 1), Prep & Measure Tool (3 in 1) and Edge Grip Quick Prep Knife Sharpener & Paring Knife Combo to help create this recipe.
  4. Thank you to KitchenIQ and So Delicious for partnering with me on this recipe.

[RECIPE] Probiotic Smoothie Popsicles

genesis today smoothie pop

This summer we have had a meal of popsicles more than once or twice this summer. These aren’t just any popsicles though and you can’t purchase them in the store. I’m talking about superfood and homemade. With Portland’s heat this summer and the lack of desire to cook has me throwing things into the blender, pouring into popsicle molds and voila there’s breakfast, lunch or dinner. I love to keep these popsicles nutrient dense, free of refined sugars and packed with superfoods.

What To Eat When It’s Too Hot To Cook

August 14, 2016 by Lindsay Ingalls 3 Comments

The post was created as a part of the #GenesisTodaySuperfoods August Challenge.
I don’t know about where you live but here in Portland we have hit a heat wave. I’m telling you I can’t even walk out my front door without instantly breaking a sweat. Who knew the PNW could be so dang hot? Anyways all this heat has me avoiding our stove and oven like the plague. So what does one eat in a heat wave? Smoothie Bowls!

genesis superfoods acai bowl

This whole idea of smoothie bowls and acai bowls is not new and it’s actually a culinary concept that I resisted for years but here I am blogging about them now because currently they are my life. They are perfect for any meal and are extremely versatile. Below is my current go-to Acai Smoothie Bowl:

The Trim Protein from Genesis contains a mixture of quinoa, amaranth, chia and other sprouted seeds. It has 16 g of plant-based protein per serving and is packed with superfoods such acai, mangosteen and goji berry. It also contains Garcinia Cambogia a fruit native to Southeast Asia that contains hydroxycitric acid (HCA) which is known to help promote weight loss.

I add the Greens powder because it helps support healthy digestion and daily nutrition. It also contains two of my favorite superfoods spirulina because it contains many essential vitamins, minerals, essential fatty acids and 18 different amino acids and flax seeds an important source of Omega-3 fatty acids. A bonus that this greens powder 25 Billion probiotics per serving, in other words your gut will thank you.

My last superfood add in is Acai 100 because I love to nourish not only my insides but also my outsides. Acai is known to promote healthy skin. I also can always use the energy boost acai provides especially when it comes to spending my days chasing two littles.

This month I have the incredibly opportunity to work with Genesis Today. I’ll be working with them to share recipes using their amazing superfood products. I have been using their products for years so working them is a hugely exciting thing.

I’ve been working on a number of recipes but the first one that came to mind was something light, refreshing and oh so Summer – LEMONADE! I love making all kinds of different lemonades so when I saw that GOJI 100 was one of the superfoods I’d be able to share I was thrilled because this stuff is super sweet and delicious. Perfect for pairing with tart lemons.

I made myself a personal size lemonade but I recommend making an entire pitcher of it for your fridge because one glass just won’t be enough. Besides tasting amazing there are so many incredible benefits from the GOJI 100. Goji berries can be found theHimalayan regions of Asia and is known as the ‘Happy Berry’ – what a great name right!  So think of this as Happy Berry Lemonade – now who doesn’t want to drink something that could make them a little bit happier!

I personally choose to drink GOJI 100 because it is known to supports a positive mood.  There is nothing more in life that I want than to feel relaxed, positive and vibrant.  So cheers!goji lemonade 10

Upgrade Your Everyday Salad | organicgirl

Upgrade Your Everyday Salad with organicgirl's new Sweet Pea and PEPPERGREENS

I feel like for me I’m either all about the salads or all I want is pasta. When I fall into a salad rut it is often due to the fact that I just get bored with my normal greens. I mean I love a bit of crunchy romaine, sweet mache or nice peppery arugula but then I run the rotation and get bored. That’s until my favorite greens, organicgirl, came out with their new PEPPERGREENS and Sweet Pea. I have never found a mix of greens that are as inventive as these two.

organicgirl sweet pea flavor profileIf I’m feeling a bit sweet I’ll go with the Sweet Pea which (depending on the season) have a pea shoots and a nice mix of tender leafy greens such as baby romaine and even baby bok choy. I love to add a small handful to my avocado toast or as a nice simple salad. It’s also great when combined with crunchy romaine hearts. Bonus if you’re looking to get a little protein, Sweet Pea provides you with 5 grams per serving!

organicgirl peppergreens leaves taste profile

When I’m feeling a like I want to turn up the heat a bit I go with the PEPPERGREENS. This mix of tender-leaf greens includes a mix of my favorite peppery arugula as well as a few different mustard greens and a new to me herb called cress. Cress is from the watercress and mustard family. These greens are my favorite on a sandwich or tossed with marinated tofu, cherry tomatoes, crispy croutons andorganicgirl‘s vegan Lemon Agave dressing. The dressing is made with real ingredients and you aren’t going to find it on the shelf but right next to the greens in the produce section of your grocery store. Bonus the PEPPERGREENS are an excellent source of vitamins A, C and K.

Upgrade Your Everyday Salad with organicgirl's new Sweet Pea and PEPPERGREENS

Now I want to share a few tips to turn your boring salad into something fun, fresh and delicious.

Step 1. Greens. Get yourself some amazing greens that make you excited to enjoy your salad. Pick ones with features that appeal to you whether that is crunchy, sweet, or peppery. Choose high quality greens because they really do taste better and will make your salad munching experience more enjoyable.

Step 2. Toppings. The topping options are really endless but I thought I’d share a few of my favorites:

Walnuts + Roasted Sweet Potato + Lemon Agave Dressing (pair with organicgirl Sweet Pea)

Peppered Tofurky + Avocado + Tomato (Pair with organicgirl Sweet Pea)

Crispy Chickpeas + Pepperoncini + Tomatoes + Zaatar (Pair with organicgirl PEPPERGREENS)

Roasted Potatoes + Red Onion + Orange Bell Pepper (Pair with organicgirl PEPPERGREENS or Sweet Pea)

Tempeh Bacon + Avocado + Jicama + Tomatoes (Pair with organicgirl PEPPERGREENS)

Roasted Beets + Hemp Seeds + Dried Figs + Lemon Agave Dressing (pair with organicgirl Sweet Pea)

Step 3. Dressing. Whether you prefer a creamy dressing, a vinaigrette or maybe you just like a simple drizzle of lemon juice make sure you are once again choosing something of quality. When looking for a vinaigrette or dressing avoid bottled dressings that are filled with sugar and preservatives and especially ones with ingredients you don’t recognize. Go for something simple, made from really great fresh ingredients and ideally something that you’ll find in the cooler or produce section such as organicgirl salad love dressings.

Upgrade Your Everyday Salad with organicgirl's new Sweet Pea and PEPPERGREENS

I hope you find a bit of inspiration and new ways to make your salad fun and delicious. If you try out these new organicgirl salad mixes let me know what you think! Last night I enjoyed the Sweet Pea on a special vegan sausage waffle sandwich with apricot jam and it was so good and maybe, just maybe I’ll have a recipe soon…

So tell me what are your favorite salad combos? What kinds of greens do you prefer spicy or sweet? Crunchy or tender?

[RECIPE] Veggie Stir Fry with Ginger Peanut Butter Sauce Plus Mighty Nut Giveaway

October 27, 2015 by Lindsay Ingalls 11 Comments

2015_10_26_MightyNutThe first time I visited a Thai restaurant and saw peanut sauce on the menu I turned up my nose. My only real exposure to peanut butter was big spoonfuls straight from the jar and fluffer nutter sandwiches. I couldn’t imagine peanut butter with savory flavors like soy sauce, garlic and chilies but the thing is it works. The peanut butter provides a super creamy and nutty flavor and lends itself well to a combination of sweet, salty, and pungent flavors. Ever since this first encounter I have been in love with peanut sauce.
2015_10_26_MightyNut10I find that the thing with my peanut sauce is that I am always trying out new combination of ingredients. For last nights dinner I went a bit heavy on the ginger and I used Mighty Nut Powdered Peanut Butter from Peanut Butter & Co. This powdered peanut butter has all the protein, fiber and delicious taste of your standard jar of peanut butter but without all the oil. You can add it to a sauce or smoothie as I have or you can simply mix it with water to create a creamy spread.

One of my favorite things to combine peanut sauce with is broccoli and tofu but since my tofu expired almost a month ago I decided to swap meaty button mushrooms for the tofu. I simply sauteed up onions, mushrooms and broccoli and tossed with a bit of the ginger peanut sauce. The sauce thickened right up when heated creating a delicious, creamy and saucy stir fry. I served it up with brown rice, some shredded green cabbage for a little crunch and extra sauce on the side. This sauce would also be great tossed with some soba noodles or as the sauce for a kale salad. Enjoy!
