On The Rise and an Earthlust Giveaway

Hubby was running late at work tonight and since we were starving we decided to go to On The Rise in Richmond VT (finally).  We have wanted to try it forever but have never seemed to be able to make it there.  The menu is so vegan friendly there is even a vegan pizza! We ordered a small vegan pizza, a deluxe salad with marinated tofu, and a chocolate macaroon.  The food was delicious, fresh and amazing.

Now onto the giveaway: Earthlust sent me one of their stainless steel water bottles and guess what the sent me an extra one just for one of you lucky readers. EarthLust bottles are hand made from high quality #304 (18/8) food grade stainless steel, which is naturally safe unlined. They use non-toxic paints and BPA-free safe polypropylene #5 caps. I received one of the 13oz bottles and it is the perfect size to take every where with me.  I am thinking about investing in a 1L bottle for trips and such but the smaller bottle is great for everyday use.  I also love that they are unlined, unlike Sigg bottles which have a weird lining and make your water taste funny. Additionally, their bottles have some really great designs. So now it’s your chance to win this bottle (see below) isn’t it so cute?

Institute for Integrative Nutrition & a Pizza Party

Yesterday started out so nice and ended up with big clouds in the sky so instead of spending the remainder of our day outside we picked up some fixings for a pizza and relaxed around the house.  To my delight my iPod from the Institute for Integrative Nutrition came today however to my disappointment the iPod can not be reloaded with any other material.  Oh well I guess a new iPod stays on my list of desired items, especially since I haven’t gotten a new one since the Mini iPod back in 2005. Also many of you have inquired about whether I will be posting about my journey to become a Certified Health Counselor and I plan to.  Right now I am working on warm-up classes for my program which starts on May 1st.  These warm-up classes teach fundamentals that are helpful to understand prior to starting classes; such as Nutrition, Primary Foods, and Food Cravings. So far I am loving being back in school and learning new things, this will be an exciting year.

A few other fun things came in the mail yesterday as well:

These bags from ChicoBag are great for taking on the go.  They fold right up into their own little carrying case and have a clip on them so you can clip it on your key chain, purse, or bag.  I like to throw them in my hand bag so that whenever I am out whether it’s picking up a few groceries, books or other things I have a a reusable bag to throw everything in.  These are especially good when I travel because I hate when I go shopping and have to carry around a bunch of plastic/paper bags, with these you can throw anything in them and they are super cute!

These yummy cookies from Kookie Karma came yesterday and I can’t wait to try them, I will report back on how they are. Update: Hubby and my dad loved the Holsitic Chocolate Chip.  My dad wants to know where he can get more of these cookies!

After spending the afternoon relaxing i.e. Neil playing baseball on the Wii and I did some work on my Fundamentals #5 Nutrition 102: Vitamins and Minerals we finally sat down together and watched a show.  I then sent Neil off to the kitchen to make the pizza dough, we used Bob’s Red Mill GF Pizza Crust Mix.  The dough was kind of sticky and soft but we made it work and topped our pizza with jerusalem artichokes (aka sunchokes), mushrooms, roasted red peppers, sun-dried tomatoes, sauteed onions and tomato sauce.  Once it came out of the oven I finished it with some sunflower sprouts tossed with balsamic vinegar and olive oil. The GF crust turned out to be delicious and we overindulged a bit on pizza.

Alright bloggies, hubz and I are off to hike/walk the loop and then will do The Breakfast Challenge Day 3 Day 2. Then we are off to spend some time with the ‘rents and G-Ma.

Rustic Crust Pizza Review

A few weeks ago my husband and I were lucky enough to come home to a big box sitting on our porch.  The box was filled with Rustic Crust Pizza and sauces, 6 different kinds of crusts and all of them vegan.  We were delighted to get to test them all out since we are pizza lovers.

The first pizza we made was a vegan chicken parm pizza on the sourdough and it was delicious! The crust is great and easy and fresh- all you have to do is brush with olive oil, top it and place in a 450F oven for 10 minutes and dinner is served!

Our second pizza that we made was a caramelized onion with tomatoes and mushrooms and it was by far one of the best pizza’s.  We used the Thin Crust which is definitely my favorite; it get’s nice and crispy and is just a great crust.

Another pizza we made (my favorite) was  the Mexican pizza on Pizza Originale Crust.  We topped it with refried black beans, sautéed onions and mushrooms and fresh salsa.  This was great and the crust was nice and crispy and was overall the best pizza that we made.

The three other crusts we had my parents and my aunt and her family test out as we had our fill of pizza for a while (as much as I love pizza 3 in one week was enough).  They loved the crusts and the pizza sauces.

Overall these are great crusts and are fresh and yummy.  Any time you need a quick go to dinner grab one of these crusts, there are tons of different flavors and even personal sized ones!
