RECIPE | Salt & Vinegar Kale Chips

Salt & Vinegar Kale Chips

Edith was begging for a snack this morning so I listed off her options – applesauce, banana, crackers- I got a no after every option. Since we are lacking in the grocery department right now I tried to rack my brain as to what other options we might have in the house. I thought about baking muffins and then I remembered we had a few bunches of kale in the crisper. I proposed the idea of making kale chips to her and she jumped up and ran to her Learning Tower ready to make kale chips (I took that as a big ol’ yes!)

I usually go for a cheezy kale chip or just plain olive oil with a dash of salt but today I decided to make salt & vinegar.

What you’ll need:

    Ingredients
    1. - 1 bunch of kale
    2. - salt
    3. - apple cider vinegar
    4. - olive oil
    5. - salad spinner and towel (to try the kale)
    6. - gallon plastic zip bag
    7. - large sheet pan
    Instructions
    1. Pre-heat oven to 300F.
    2. De-stem your kale, rip into chip sized pieces and then wash and dry completely; this will ensure a crispy chip.
    3. Pour about a tablespoon of olive oil and ACV into the zip bag along with a pinch or two of salt.
    4. Add the kale to the bag, push out the air and zip close and then massage your kale with oil, vinegar and salt.
    5. Pour out onto a sheet pan and toss into the oven for 30-40 minutes until crispy.
    6. Allow to cool for 5 or so minutes on the sheet pan before gobbling up.

What are you favorite kind(s) of kale chips? I love cheezy kale chips made in the dehydrator but when I’m in a pinch I like to do olive oil, tamari, nutritional yeast and a dash of pepper (same directions as above) and toss them in the oven for quick crisping.

Five Things: Food Lovin’

This week is all about foods that I am loving this week.

Hot Teas | Although I am a coffee lover I have been cutting back to no more than one cup per day.  Now that it is fall I crave nice warm beverages to warm me up so I after my cup of coffee I have been turning to teas to warm me up and enjoy throughout the day.

Kale Chips | I am in love with kale chips, but I mean these days who isn’t? I think my craving is in over drive because I have enjoyed so many tasty ones lately and my desire for snacks is over the top right now. I must pick up some kale next week to make my own tasty batch of kale chips. What’s your favorite flavor?

Raw Macaroons | Not only am I craving some nice savory kale chips I am also loving these new tasty macaroons.

Harvest Beers | Okay not really a food but I am loving them right now.  Last weekend we had a harvest beer tasting and in a few weeks we are hosting a pumpkin beer tasting.  If only I wasn’t breastfeeding I could enjoy more than a few sips. What is your favorite harvest or pumpkin beer?

Soups, Stews & Chilis | As son as the leaves start to change my weekly menu has at least one soup, stew or chili on it.  Last week I made a delicious squash-bulgar chili (recipe to come) and this week we had split pea soup. What is your favorite soup, stew or chili recipe?

Love Me Some Kale Chips

I am a huge fan of kale chips, I mean nowadays who isn’t? There is nothing better than having a chip that is also healthy, but for it to be good it needs to also be tasty.  So what I am saying is that not all kale chips are created equal. I love to make my own kale chips (which usually are the best) but sometimes I like to try the number of packaged varieties that you can find in stores today.

The most recent kale chips that I tried (and really enjoyed) were Pacific Northwest Kale Chips which are actually on special right now on Vegan Cuts.

Neil and I took the three flavors of Pacific Northwest Kale Chips on our recent road trip down to Rhode Island.  The first flavor we tired was the Cheezy Crunch which we thought would have been our favorite flavor because who doesn’t love cheezy  flavors? Don’t get me wrong they were good but not quite as cheezy as I would have liked.

The second flavor we tired was the Stumptown Original which were really tasty and I loved the use of hazelnuts in the flavoring.  It’s not often that you find kale chip season made with hazelnuts usually you see cashews or sunflower seeds so this was a nice nutty change.

We liked all three but in the end we decided that the Glacier Peak Greens, which was a combo of cilantro, jalapeno and lime, to be our favorite of the three. We were both surprised how much we enjoyed this flavor combination.  Neil isn’t a huge fan of cilantro and although I am I wasn’t sure if the lime and cilantro would be over powering but in the end the flavors were super subtle and really flavorful.  We finished the whole bag of Glacier Peak Greens down to the last crumb on the way to Rhode Island.

Overall: Big fan of the kale chips and I loved the packaging-the chips stayed super crispy!

Recipe of The Week: Sweet & Spicy Kale Chips

  • 1 bunch of kale, ripped into chip sized pieces, rinse and dry
  • 2 dates
  • 3/4 cup water
  • 1/2 cup cashews
  • 1/4C nutritional yeast
  • 1T Sudachi juice (can substitute lime)
  • 1t chipotle chili powder
  • 3/4t garlic powder
  • 3/4t paprika
  • 1t shoyu (can substitute soy sauce, tamari or Braggs)
  1. Place the ripped kale in a large bowl. Place the dates through shoyu in a blender and process until smooth; pour over the kale.
  2. Massage the sauce into the kale until evenly distributed.
  3. Dehydrate method: Place on dehydrator trays and dehydrate at 118F for 10 to 12 hours (however I doubt that once you start check in them every few hours that there will be any left by the time the days over). Oven method: Preheat oven to 350F.  Place the sauced kale on a baking sheet and make for 12-15 minutes until the kale chips are crispy but not burned.
