Parfait For The Win!

Today’s post is supposed to be about self-care but honestly you’ve been getting a lot of those lately so I’ve decided to switch gears and do a little life check in.  If you are looking for a self-care post I encourage you to read my two latest posts:

In other foodie news the Hubz and I have been on a parfait kick for the past week.  They are quick, easy and so delicious.  We have been making them for breakfast and sometimes for dessert in a variety of combinations.  Our favorite though is vanilla soygurt, Justin’s chocolate hazelnut butter, berries and Uncle Sam cereal for some crunch.  Other combinations have been vanilla coconut yogurt with dates, kiwi, mango and Uncle Sam cereal for some crunch and then a variety of different flavors of coconut yogurt with berries and Uncle Sam cereal.  We are just loving it and I can make one cup of soygurt/coconut yogurt be enough for the two of us when it’s bulked up.  However the better deal that I have turned to are the large 3serving tubs of Whole Soy vanilla soygurt so good and so easy to use for parfaits.

Health Coaching Update- The Hubz is working on my new site and I hope to have it up and running in the next 6 weeks – there are are lot of details to workout.  I also have arranged for four workshops throughout this summer at Hunger Mountain Co-op so if you are in the area you should sign up for one of them.  I will be providing more details when everything is confirmed.

I also got my brochures printed and they look beautiful but I need to get a new photo of myself for the inside and I need to find some place less expensive (than Staples) to get them printed- any suggestions?

In other news the Hubz and I have a currently secret project that we’d like to roll out this summer and it is something I know you will be excited about. I also am getting back into recipe mode and I am planing to work on a summer recipe ebook. We also will be working on community summer garden plot soon and I will be doing more post about that. So there are a lot of things to look forward to.

Weekend Wrap Up

This weekend was a fairly busy and yet uneventful one and I could really go for an extra day off.

Friday was a ridiculously busy day- none of which did I make time to capture in photographs- but it started with a frustrating morning at the dealership where I went to get my oil changed and it turned into a whole big, extra long mess.  Then it was off to work later than planned to finish a grant proposal that was due at 5pm.  I had a later day at the office than usual but was able to finish the application and get it sent off at 3:40pm! Following that I had to pick up the Hubz and head to the hospital to visit my mom who was having out-patient surgery on her knee.  After our brief visit and long day the Hubz and I were ready for a margarita and portobello fajitas.

Saturday was as little bit more relaxed; we spent most of the day at home working on our projects. We stopped around noon and decided to try out this Vegan Harvest pizza from American Flatbread that I had picked up on a whim.

The verdict: the pizza was meh-okay.  The Hubz and I both though the crust was delicious but that’s a given because American Flatbread has the best crust.  The pizza overall was greasy and really lacked in flavor.  It had a tiny bit of sauce on it and a ton of Daiya.  I would have liked to have seen vegetables on the pizza and a few more herbs.  Overall I don’t think we’d buy this again because we can make a veggie filled home-made pizza for the same that it costs us to buy this frozen pizza.

The Hubz went snowboarding with a friend on Sunday so I spent the entire day working on edits for my e-book that will hopefully be released on Tuesday or Wednesday! Fingers Crossed! Here is a sneak peak

Let the Countdown Begin!

For the last few months I have been blogging and tweeting about my newest e-book which will feature recipes for the whole family.  The testing has been going really well and much faster than anticipated so I am hoping to have the e-book ready for release by February 7, 2011(update- the hubz says he hopes to have it all worked out by then but no guarantees it may be more like the 1oth or 14th). Learning To Juggle

Since the holidays I have been keeping busy working on a number of new projects for the blog and my health counseling; this, on top of attempting to have a social life and work my regular job as well. I am happy to say that after this Friday things should get back to their regular pace and I will have a number of really great blog posts coming at you. For now, here is a sneak peak into what I have been working on lately:

Health Counseling

I have been working hard at completing my modules as well as taking time to market myself.  I have contacted a number of businesses about doing nutrition and wellness workshops which I hope will start up in February/March.  I also have been working, rather the Hubz has been working on getting my website for my health counseling business (Health and Wellness with Lindsay) up and running

Vegan Cookbook Club

I am proud to say that the Vegan Cookbook Club is up and running and we have an number of participants for our first book Veganomicon. The start date for Book #1 is Jaunary 16th so if you are interested in participating please contact me.


Ebook #2

I have been working hard at creating recipes for my second ebook and with the help from my really amazing and dedicated testers it should be released the first week of February; one month ahead of schedule.  There will be 25-30 recipes in this e-book featuring brunch, lunch & dinner recipes for the whole family.

Cook.Vegan.Lover. Survey

I have been spending time (when I have it) to go over the results of the Cook.Vegan.Lover. Survey in preparation to write a blog post discussing the results and the improvements that you will see on Cook.Vegan.Lover.  You will not be seeing any huge changes but rather I will be attempting to improve what is already here.  I really appreciate the open and honest feedback from all of you because it helps me to be a better blogger.
