What To Eat When It’s Too Hot To Cook

I don’t know about where you live but here in Portland we have hit a heat wave. I’m telling you I can’t even walk out my front door without instantly breaking a sweat. Who knew the PNW could be so dang hot? Anyways all this heat has me avoiding our stove and oven like the plague. So what does one eat in a heat wave? Smoothie Bowls!

This whole idea of smoothie bowls and acai bowls is not new and it’s actually a culinary concept that I resisted for years but here I am blogging about them now because currently they are my life. They are perfect for any meal and are extremely versatile. Below is my current go-to Acai Smoothie Bowl:

  1. 1 banana
  2. 1/2 cup unsweetened vanilla almond milk
  3. 1oz Genesis Acai 100
  4. 1 cup frozen mix berries
  5. 1 scoop Genesis Trim Protein Powder
  6. 1/2 scoop Genesis Greens Powder
Top
  1. Almond Butter
  2. Berries
  3. Coconut
  4. Banana
Instructions
  1. Blend base until smooth.
  2. Pour into a bowl and top!

The Trim Protein from Genesis contains a mixture of quinoa, amaranth, chia and other sprouted seeds. It has 16 g of plant-based protein per serving and is packed with superfoods such acai, mangosteen and goji berry. It also contains Garcinia Cambogia a fruit native to Southeast Asia that contains hydroxycitric acid (HCA) which is known to help promote weight loss.

I add the Greens powder because it helps support healthy digestion and daily nutrition. It also contains two of my favorite superfoods spirulina because it contains many essential vitamins, minerals, essential fatty acids and 18 different amino acids and flax seeds an important source of Omega-3 fatty acids. A bonus that this greens powder 25 Billion probiotics per serving, in other words your gut will thank you.

My last superfood add in is Acai 100 because I love to nourish not only my insides but also my outsides. Acai is known to promote healthy skin. I also can always use the energy boost acai provides especially when it comes to spending my days chasing two littles.

{Recipe} GOJI 100 Lemonade | #GenesisTodaySuperfoods

This month I have the incredibly opportunity to work with Genesis Today. I’ll be working with them to share recipes using their amazing superfood products. I have been using their products for years so working them is a hugely exciting thing. 

I’ve been working on a number of recipes but the first one that came to mind was something light, refreshing and oh so Summer – LEMONADE! I love making all kinds of different lemonades so when I saw that GOJI 100 was one of the superfoods I’d be able to share I was thrilled because this stuff is super sweet and delicious. Perfect for pairing with tart lemons. 
Goji Lemonade

Ingredients
  1. 1 oz freshly squeezed lemon juice
  2. 2 oz water
  3. 1 oz Genesis Today Goji 100
  4. 2-4 teaspoons agave nectar (sweeten to taste)
  5. 12 oz glass jar filled with ice
Instructions
  1. Pour the lemon juice, water and agave over the ice, screw on the cover and shake, shake shake.
  2. Remove lid and pour the Goji 100 over.
  3. Add a glass straw and enjoy!

I made myself a personal size lemonade but I recommend making an entire pitcher of it for your fridge because one glass just won’t be enough. Besides tasting amazing there are so many incredible benefits from the GOJI 100. Goji berries can be found theHimalayan regions of Asia and is known as the ‘Happy Berry’ – what a great name right!  So think of this as Happy Berry Lemonade – now who doesn’t want to drink something that could make them a little bit happier!

I personally choose to drink GOJI 100 because it is known to supports a positive mood.  There is nothing more in life that I want than to feel relaxed, positive and vibrant.  So cheers!goji lemonade 10

Pregnancy Cravings & Pure Leaf Iced Tea

Current pregnancy cravings: berries, doughnuts, raspberry jam and crackers, lemonade, and iced tea.

While I avoided caffeine almost completely during my first 15 weeks of pregnancy I have been enjoying small amounts (8-12oz cup; 4-5 days per week) in the form of coffee or tea during my second trimester. While I usually enjoy hot coffee or tea I have been craving iced beverages specifically sweet iced tea. While I try to go unsweetened for the most part I have been enjoying a cup or two of Pure Leaf Lemon Iced Tea which is lightly sweetened.

lipton pureOne of the benefits of tea is that calms me down especially when the stresses of raging pregnancy hormones and a teething toddler takes over. I also like knowing that while I’m sipping on tea I am also taking in antioxidants and helping to fight free radicals in my body.

Like I said I prefer an unsweetened tea but have really been enjoying the fresh brewed taste and light sweetness of the Pure Leaf Lemon. It’s super refreshing and an 8oz glass satisfies my pregnancy iced tea cravings, plus I can pretend that it’s sunny and 80F while I sip on it rather than 55F and raining.

Side Story: Pure Leaf Lemon reminds me of the instant Lipton’s Lemon Iced Tea that my grandmother used to make in huge batches during the summer. Every sip is like being at grandma’s however rather than instant this tea is fresh brewed.

Martini, Scrabble & Tofu

Last night I broke our “no eating out” for the rest of the month rule and convinced the Hubz that we needed a night out on the town. He agreed that we have been cooped up in our apartment for the past week only leaving for work and groceries. It was time for a date night out. We started our date night at Drink in hopes that the special drink of the day would be something we wanted but it end up being raspberry vanilla infused vodka, um gross. So instead we decided to go with martinis, olives for me and a twist for him. We decided that we would take our time and draw the night out as long as possible so we sipped our martinis and played a round of scrabble. We had fun and let a few not so “legal” words pass. Once our glasses were empty and our game complete we headed just a few doors down to one of our favorite restaurants Pacific Rim. The first thing we saw though was a sad sign saying that they would not be renewing their lease and therefore would be closing at the end of the month. So with that being said we went in and made sure to order our favorite dish one last time. Unfortunately this is when the photos get a little less than clear, I realized after I had already left home that I had forgotten my camera on the counter, FAIL. 

I decided that I would stick with another martini with dinner but unfortunately this one just wasn’t as good and the olives were teeny tiny; I really hate when you don’t get good olives in a martini.

After ordering our drinks we started with the vegetable dumplings which weren’t really that good, they were greasy and had little flavor. I was hungry though so I topped them with sriracha and dipped them in soy sauce. 

For our entrees the Hubz and I both got our favorite dish the Grilled Spicy Tofu which is marinated tofu that is grilled and then topped with a spicy red sauce and served with brown rice, steamed veggies and kimchi.  It was just as good as I remembered it and I ate the whole thing. I am sad to say this will probably be the last time I ever eat it….hmmm maybe I will try to recreate it.

I know these photos are awful! The Hubz said “those don’t even look like food”

Recipe: Skinny Blood Orange Margarita

Skinny Blood Orange Margarita

Margaritas are generally filled with sugar and can be anywhere from 250-500 calories.  

This recipe is great and only around 150 calories a serving so you can enjoy your margarita without the calorie guilt.

Ingredients: (makes 4-5 margaritas) 

  • 8oz silver tequila 
  • splash of triple sec
  • 1t agave nectar
  • 3 limes, juice and zest
  • 2 blood oranges, juice and zest
  • 3-4 cups ice

Throw everything into the blender and blend to a slush.
