I Was A Breakfast Hater Until I Met…

I used to hate breakfast.

I have always been a lunch or dinner gal not into those breakfast foods and especially since going vegan when breakfast can sometimes be more challenging (or time consuming) to figure out.

And then I met…..chia seeds (Buy Now). oatmeal. and nutbutter.  Now of course I liked these things on their own and in other forms but once these all united I saw the light and fell in love.

Tuesday Breakfast: Whole Wheat Waffles with Coconut Peanut Butter, Bananas, Chia Seeds, Oats, Goji Berries and a little Agave Drizzle

Wednesday Morning Oats: coconut, peanut butter, chia seeds, cacao nibs, goji berries and stevia

Multigrain Oats with above mentioned fixings

Smoothie of Love

This morning I just wasn’t feeling solid foods, warm foods, heavy foods, ect.  However something cold sounded good, especially in this ridiculously hot weather (it has been over 90F in VT this week).  So I decided to make a smoothie filled with the things I love.

Melon from our CSA, unsweetened Hemp Milk, Chia Seeds and Raw Almond Butter

I really love to add chia seeds to smoothies because it adds omega-3’s and are loaded with antioxidants, calcium, protein, fiber, and vitamins including calcium, phosphorus, magnesium, manganese, copper, niacin, and zinc.  They really help to bulk up my smoothie. Buy Now

I also add the raw almond butter to bulk up this simple smoothie since I am having it for breakfast and want it to fill me until lunch. This raw almond butter is great because it is silky smooth and just nice a creamy with a sweetness you don’t get from regular almond butter which generally is made from roasted almonds. Back in the Oatmeal Groove

I used to eat oatmeal for breakfast almost every morning but once the weather got warm it just wasn’t as appealing for me and ever since I have struggled to find something that fills me up and keeps me satisfied until lunch.  I tried oats with soygurt, toast, cereal, smoothies and fruit but none of them seemed to work.  Now I am back to my old ways and in the oatmeal groove and I’m loving it.

This mornings oats included my favorites: Irish Style Oats, cinnamon, chia seeds…..

Nothing goes better with oatmeal than a french press of coffee in a tiki mug!
