That’s right folks the old man and I are headed to the great outdoors to test our camping skills. Now this won’t be easy with our nice new tent, camping mattress and of course that newish camping stove but I think we can tough it out and survive. I will hopefully be back on Sunday with a nice post, unless of course a bear eats us, so until then here are a few things for your enjoyment (oh and don’t forget that there is still time to enter the Care Package Swap of 2010:

This weekend our friends from Toronto came to visit and we had our first camping trip of 2010. We stayed at Little River State Park in Waterbury VT; it’s a great park with lots of nature/hiking trails and is located on the Waterbury Reservoir. We had intended to spend Friday and Saturday night camping but when the rain started and then the thunder we had one of the quickest tear downs, packed up the car and headed to our house.
However before we headed home we:
The boys fired up the camping stove and we had some yummy eats
veggie burgers and sweet potatoes
Then we took a drive to the Waitsfield Farmers Market where Neil and I enjoyed some black bean tamales that I unfortunately didn’t get a shot of. We took a drive up to the top of Stark Mountain where we proceeded to take a ton of photos.
Then after hitting up On The Rise for a vegan roll up we went on a hike back at the campground.
Following our almost 7.2K hike we relaxed at the beach and caught up on some trashy mag reading. Then it was time for dinner before the rain.

We enjoyed some brews while we cooked up some food; I heart Magic Hat and Wacko is a great summer beer.
Dinner was yummy lentil sweet potato tacos both soft and hard.
After dinner we roasted up some vegan marshmallows and topped the chocolate agave cupcakes that I made Emma for an early birthday “cake”.
Luckily we got our marshmallow roasting done early because then the thunder rolled in and the air grew thick and we decided to make a mad dash to get the entire camp picked up and go to our house….where it was sunny.
Tomorrow we are heading out to go camping with our friends from Toronto so I am spending the day working and trying to clean our house, prepare food for camping and locate all our camping gear. Last year our first camping trip was to Lafayette Campground at Franconia Notch in NH. Here is a recap:
Over this past weekend we attempted camping, however gave up after 2 nights once the rain started and soaked us. Thursday night we enjoyed a dinner of Chesapeake Tempeh Cakes from Vegan Brunch, roasted potatoes and grilled asparagus. All of which was delicious.
For my birthday on Friday my husband made garlic bread and pasta which was yummy the garlic bread was my favorite though. For dinner Friday we enjoyed more Chesapeake Tempeh Cakes, vegan chicken burgers, roasted potatoes, cucumbers and tomatoes, and grilled veggies which were all delicious! (The Chesapeake Temeph cakes went over well with our omni friends and family). For dessert my mom brought a vegan raspberry pie from Healthy Living and it was great…. A little too much lemon juice but otherwise delicious.
Saturday morning after having it rain all night, we decided to head to the house to wash the mud off and have a nice warm breakfast. I made Tofu Benny and my hubz made Diner Homefries both from Vegan Brunch which were both delicious! We enjoyed a late lunch at Orient Chinese restaurant in Hanover NH where we had yummy vegetarian sesame chick’n and steamed veggies so good! For dinner we had grilled cheese with ketchup.
This week we are light on the cooking as we are heading away Saturday and going to the Champlain Valley EXPO Thursday so upon our return from our tropical cruise we will be posting more recipes and cooking along with reviews and giveaways!
For the first time in awhile I actually spent some time in the kitchen cooking some real food. My husband and I are going camping for the next few days and I wanted some fun food for us to eat. So last night, with the help of hubz, we made from Vegan Brunch: Cinnamon Rolls, Chesapeake Tempeh Cakes and Samosa Pancakes!
The best part of camping was the S’mores that were made with Sweet & Sara Vegan Marshmellows. These marshmellows are so simillar to non-vegan you would never know the difference and they roast up so well!
