Pizza or Indian….How About Both?

Happy Sunday (2nd Saturday)! I love long weekends! This morning Neil and I spent a few hours doing laundry and and caught up on some reading. I finally finished The Girl Who Kicked the Hornets Nest and started No Meat Athlete’s Half Marathon Roadmap.

After our laundry date we headed downtown to the water front for a walk; we did 4 miles in 68 minutes and it felt great. We are right on track for our 5k in three weeks and then it’s on to our 10k in September and then our half in January.

After our walk we headed to American Flatbread for a beer and flatbread of course. Neil and I both got a Long Trail Brewmasters Double IPA. It was so good.

For lunch we split an Evolution salad and a Revolution flatbread hold the cheese add olives.

Evolution Salad: Organic Sweet Leaf Lettuce & Mesclun Greens w/Organic Carrots & Celery, Arame Seaweed, toasted sesame seeds and ginger-tamari dressing

Revolution Flatbread: Homemade organic tomato sauce, caramelized onions, fresh herbs and kalamata olives

We also shared a half of a stout for dessert:

After lunch we did a little window shopping and restocked our beer selection; I can’t wait to try them over the next month. Now it’s time to relax with a little left over Indian food recipes from The Asian Vegan Kitchen (made last night) and a movie or two. GOODNIGHT!

Gym. Market. Garden.  That has been our day!

This morning the Hubz and I downed two dates with almond butter and then headed to an early morning swim at the Y.  The hubz and I both swam tough 500 yards in the lap pool.  It has been forever since I swam laps and I forgot about how much of a work out it is!  After the Y we headed to Starbuck$ for a decaf iced coffee (to share) and we both picked up an oatmeal before heading to the first summers farmers market of the year.

After coffee and oatmeal we headed to the market where we picked up beautiful greens, purple carrots, rutabaga and some organic plants for our balcony garden.

After the market we had our community work day at our garden where we spent two hours raking and rolling out things. Crazy workout.

After our community work day we headed home for a late lunch before we headed back to our own garden plot to get to work on our plot.

After lunch we headed back to the garden to get down to work and we even had a wonderful guest; my good friend Allie came for a visit with her furry friends.  We did more gardening and snacked on a Bora Bora bar.

After swimming, walking and gardening it was time for a bike shopping and date night out with the Hubz. First we went to look for new bikes for the Hubz and then to American Flatbread for beers and flatbread. Now it’s time to sit and relax and finish our movie.

Weekend Wrap Up

Gosh I’m pooped! This weekend has been crazy busy for the us between the massive load of laundry we had to do, blog updates/upgrades and visiting my parents where I had an awful nights sleep. I am about ready to pass out on the couch right now but instead I’m going to finish this post and get my workout in because I know I will regret not doing it even though i’d rather go sleep. Enjoy our weekend in photos (yes it’s all food- what can I say it was that kind of weekend).

Sunday Breakfast Broiled Grape Fruit aka "Royal Grapefruit" (the Hubz thought I said royal when I really said BROILED so now it's Royal Grapefruit)

Yields 4 servings- mix 2T agave, 1t vanilla, 1/2t cinnamon & 1/4t ginger powder together and brush on 2 halved grapefruits- broil on high for 5-10 minutes

99 Bottles of Beer…

The Hubz and I are “beer aficionados” or at least we like to think we are (more the Hubz than me) ….if you aren’t laughing you should be.  Anyways we really do love beer especially really good craft beer; we are lucky to live in Vermont where there are tons of craft breweries. Anyways so as many of you may have seen me tweeting the Hubz and I had a mini beer tasting on Monday night. So we rated the beers based on what we liked the best (5 being best and 1 being worst), however below is the order we drank them in:

Victory Storm King Stout- 3.5- great flavor and hoppyness which I love

Long Trail Harvest-2 this was just okay.

Dogfish Head Punkin Ale-4-loved this! it was not too sweet like some pumpkin beers are; it had great spice and overall flavor we will be purchasing this again!

Sierra Nevada Tumbler-3-this was alright but not my favorite, not my least favorite either.

We enjoyed the Sierra Nevada Tumbler with Squash and White Bean Soup & Sour Dough Bread - p.s. if you are interested in being a tester for my soup e-book e-mail me! More details soon!

Southern Tier Harvest (my favorite)- 5! This beer was delicious! A great fall beer with lots of hops!

Victory Festbier-1.5-this beer was pretty much a fail. Very boring and little flavor.

Vegan Mofo#9: Mac and Cheese

I have been reading all these great Vegan Mofo post about Autumn Comfort foods which automatically made me crave squash, sweet potatoes and apple pie. One of my favorite fall, comfort food dishes is Mac and Cheese which was great especially paired with Hitachino Nest White Ale (beer).

Mac and Cheese with Zucchini and Mushrooms
  • 1 Cup Soymilk
  • 1/3 Cup Raw, Unsalted Cashews
  • 1/2 Cup Nutritional Yeast
  • 3 Tbs  Soy Sauce
  • 2 Tbs Earth Balance Margarine
  • 1 Tbs Tahini
  • 1 Tbs Red Miso
  • 1 Tbs Cornstarch
  • 1 Tbs Fresh Lemon Juice
  • 2 tsp Dijon Mustard
  • 1/2 tsp Paprika
  • 4 Cloves of Garlic
  • 1 Large tomato, diced
  • Black pepper, to taste
  • 1 box of short pasta (penne, rigatoni, ect)
  • 2 zucchini, Sliced in half moons
  • 8oz baby bella mushrooms, sliced in half
  • 1 Tbs Olive Oil
  • salt and pepper

Pre-heat oven to 350F.  Toss zucchini and mushrooms with olive oil, salt and pepper and place on a sheet pan; roast for 35 minutes.  

To make sauce blend soymilk, cashews, nutritional yeast, soy sauce, Earth Balance, tahini, red miso, cornstarch, lemon juice, dijon mustard, paprika, garlic, tomato and black pepper. Blend until smooth. 

Cook the pasta, I like gluten free pasta or whole wheat. Drain the pasta and pour the sauce into the hot pan and slowly heat up; the sauce will thicken slightly.  Add the zucchini, mushrooms, and pasta- toss to coat.
