It’s Starting to Look a Lot Like….

…Christmas!

I know we are crazy, this weekend one of my girlfriends came over and we spent the entire Saturday afternoon/evening making crafts for Christmas gifts. We also enjoyed this wonderful pizza that was so delicious.

Kale, Squash and Apple White Pizza

Recipe:

  • 1 whole wheat pizza crust (I buy prepared dough from our health food store)
  • 1/2 delicata squash, thinly sliced and roasted at 375F for 25 minutes
  • 2-3 cups of dinosaur kale, chopped and sauteed with 1T olive oil and 1T garlic until soft
  • 1 small apple sliced
  • 1/2 cup diced tofu, sauteed in 1T olive oil and 1T garlic until browned
  • Garlic Base- 2T Vegan margarine, 1/2T vegan parmesan and 3 cloves of roasted garlic; blend to a paste
  • red chili flakes, optional
  • salt and pepper

Preheat your oven to 450F.

Roll out your dough and place on a baking sheet that has been sprinkled with cornmeal. Spread the garlic base on your pizza and then begin to place on all of the toppings.  Sprinkle with chili flakes if desired and a little salt and pepper.

Place in the oven and bake for 15-18 minutes until the crust is brown.

Vegan Mofo #2: Apple Pie and Rustic Cabbage Soup

October 2, 2009 by Lindsay Ingalls 3 Comments

Fall is here!  Fall is my favorite time of the year and with fall comes great products to make yummy Autumn dishes.  Some of my favorite products are potatoes, squash, apples and cabbage. To start the fall off I made Apple Pie and Rustic cabbage soup which were both delicious. For the Apple Pie I used the recipe from Babycakes cookbook which was great. The recipe starts by roasting the apples with agave, lemon juice and cinnamon which really brings the flavors out. The crust is wonderful and is made from spelt flour, agave, coconut oil, baking powder and salt.   This crust is used to make a very rustic crust which is great and a must try.

I also made some delicious Rustic Cabbage Soup that was inspired by 101 Cookbooks it was filling and delicious (and even better the 2nd day).

Rustic Cabbage Soup Recipe adapted from 101 Cookbooks

1 tablespoon extra virgin olive oil
a big pinch of salt
1/2 pound potatoes, cut 1/4-inch pieces
4 cloves garlic, chopped
1 large yellow onion, sliced
5 cups vegetable stock
1 can of cannellini beans
1 small green cabbage, sliced

1T Goya adobo

more good-quality extra-virgin olive oil for drizzling
1/2 cup nutritional yeast

Heat the oil in a large pot.  Stir in the cabbage and onions and cook until caramelized.  Stir in the salt and the potatoes and cook for a 3-5 minutes.  Add the broth, garlic and adobo.  Let it come to a boil and cook until potatoes are soft.  Stir in the nutritional yeast and beans.

Serve drizzled with a bit of olive oil.

Serves 4.

Review: Yogavive Yogachips

September 23, 2009 by Lindsay Ingalls Leave a Comment

Yogavive has created one of the best snacks- healthy, sweet, and satisfying.  Yogavive’s Yogachips are everything a great snack can be and are delicious.  My hubby and I tired the original, cinnamon, peach, and caramel.  They were all delicious, unfortunately I didn’t get to try the caramel or original but my husband assures me that they were good.  With only 35 calories a bag you don’t have to feel guilty when satisfying your sweet tooth.  They also would be a great snack for kids, they have fun appealing packaging and what kid doesn’t love apples and chips – and mom’s can be happy they are filling up on apple chips instead of the potato sort. So give these yummy treats a try.
