Beans, Beans The Magical Fruit…

Beans, beans the magical fruit the more you eat the more you…..okay you know how the rhyme goes.  Beans are a great source of protein and nutrients but for many people eating beans does a real number on their stomachs. The cause of the gas is from a sugar in the beans and it is easily preventable.  Here are a few ways to make beans give you less gas:

1. Make sure if you are using dry beans to soak them for at least 8 hours and then make sure when you do cook them that they are cooked in fresh water until soft.  Do not add salt to the water. Alternatively for canned beans make sure to rinse them to remove all the salt and then I recommend cooking them in a little vegetable broth for 10 minutes.

2. Refried beans, not the healthiest; these beans that have been cooked once and then cooked a second time with some sort of fat weather margarine, oil or vegetable shortening.  The fat helps to balance that sugar causing gas.

3. Do not eat fruit with beans such as tomatoes.

4. Eat rice and beans- whole grains and beans are a great combination and civilizations have been pairing these two things for hundreds of years- this is proof that they are a wonderful combination.

5. My favorite thing to do is add seaweed, specifically kombu to my beans when I am either boiling them from dry or even with canned when I do a second mini cook.  Additionally adding seaweed will provide a number of essential minerals and is a great detoxifier; I also love to add it to my grains (don’t worry if it makes you squeamish you don’t have to eat it to get the benefits and it doesn’t make your grains or beans taste funny).

I would recommend that if you shy away from beans because of their “magical properties” that you test out these 5 easy tips and see how your body feels.  Everyone’s body is different so if one suggestion doesn’t work for you move on to the next.

Below are a few of my favorite bean recipes:

Three Bean Burgers

2 cups of black eyed peas, kidney beans, and chickpeas
1/4 cup chickpea flour
1/2-3/4 cup panko breadcrumbs
1/2t chili powder
1/2t cumin
1/4t garlic powder
salt and pepper to taste
1T hot sauce (I used VT Pepperworks Chocolate Chipotle)

Preheat the oven to 400F.  Spray a baking sheet with cooking spray. Mash the beans up and add in the spices, chickpea flour, panko breadcrumbs and hot sauce. Form the patties into 1/4 cup patties and bake for 10 minutes on each side.


Creamy Mashed White Beans

2 cans Cannelini beans, drained and rinsed
8-10 oil packed sundried tomatoes, chopped small
5 scallions, chopped small
3T vegan cream cheese
salt and pepper to taste
1t garlic powder

Add all ingredients to a pan over medium heat and mash with a potato masher.  Mix everything together and then heat until warmed

Lulemon Love

I woke up Saturday morning to a wonderful surprise- a nice package from my Hubz!

My first Lulemon outfit! I was so excited I couldn’t wait to try it on.  Along with this outfit the Hubz picked out a bottle of wine (I’ve wanted to try forever) and my favorite trashy magazine.

I tried the outfit on and it fit great so the Hubz and I headed downtown to Lulemon (which I only learned that we even had one on Friday-so out of the loop) to go to a free yoga class.  So excited about free yoga classes on Saturday mornings at Lulemon!

The Hubz and I went to our first yoga class in months and it felt so great to be back on my mat with other people practicing all around me.  It is such a different feeling to practice with others then to just practice at home.  I honestly have no idea what type of yoga we were doing but it felt great, a little challenging at times but I got a good sweat on and left feeling relaxed (and hungry).

After yoga we stopped over at the co-op to pick up some lunch and sat outside and enjoyed our food in the warm weather.  After lunch we ran around and did some errands before having guests over for dinner.

New Moon and Jivana Spa

Friday after work I headed downtown to meet the Hubz and grab a bite to eat before we headed to our spa appointment. I decided that I we should try a place we had never been, New Moon Cafe,  at first glance I thought the place was super tiny but when we got in a little further we realized the place was huge!  We have decided that with the free wi-fi we probably will be spending a lot more time here, except strangely they are not open on Saturday’s.

The Hubz and I shared the grilled veggie sandwich (sundried tomato pesto is vegan!), a Gus soda and a bag of Zapp’s Spicy Cajun Crawtators chips. Everything was delicious!

After our bite to eat we went for a walk to kill some time before our spa appointment.

Finally it was time to enjoy our spa treatment! Since there were no cameras or cellphones allowed I didn’t get any shots but let me tell you it was amazing! Here are some photos from the Jivana website:

After the amazing Balinese massage I had a sugar scrub and left the spa feeling refreshed, renewed and so relaxed.  I decided to go with the lemongrass massage oil and body scrub and it really did smell wonderful.

After our spa appointment it was getting pretty late so we decided to go out for some yummy Asian Food.  We got the avocado roll to share and then I got a big bowl of tom kar soup with tofu, veggies and udon noodles. The Hubz got this great dish which was almost like a deconstructed sushi roll both amazing and ridiculously filling.

25 Things For My 25th Year

I love making goals and lists and plans – just ask The Hubz it drives him nuts but he loves me anyways.  Since I am now (tomorrow) in my 25th year of life I figured what better than a list of 25 things for this 25th year.

  1. Run a 5K
  2. Try Bikram Yoga
  3. Do an overnight hike on the Long Trail
  4. Visit Montreal (again)
  5. Visit Ottawa (again; first time ever with Hubz)
  6. Visit Toronto (again; missing my bff)
  7. Visit Key West because the Hubz
  8. Visit Chicago- a place the Hubz and I have both never been
  9. Attend the Healthy Living Summit
  10. Start my Health Counseling Business
  11. Create an e-book of my recipes
  12. Laugh more.
  13. Do more yoga.
  14. Work on my writing skills.
  15. Get all the stamps in my VT Brewers Passport Stamped
  16. Go to a driving range and hit some balls
  17. Read 10 new books.
  18. Update my blog with a new fun look
  19. Eat more oatmeal.
  20. Drink more green monsters
  21. Call my girlfriends more.
  22. Get a massage*
  23. Get a pedicure
  24. Get a facial (see the trend- love the self care)
  25. Final outfit our house so that it is “grownup” and organized.

*To start crossing things off the list the Hubz and I will be visiting Jivana Holistic Spa this afternoon for some body treatments which includes a Balinese Massage. Here are some photos from the Jivana Holisitc Spa sight since I probably won’t be able to take any photos inside.

Business Before the Party

This day started bright and early with a wonderful session on my yoga mat:

Considering I had a huge day ahead of me I decided that I needed to enjoy a healthy yummy breakfast. This morning I enjoyed miso soup, whole wheat toast and I attempted to enjoy some melon from our CSA but it as just awful.

I made myself some lunch which was good minus a little failure; I made a mesclun salad with chickpeas, raisins and heirloom tomatoes. Raisins a little old and were supper sugary and secondly I HATE MESCLUN MIX. There I said it. I have tried to like it but it just isn’t going to happen. With my chickpeas and tomato salad I had a dijon balsamic dressing and had some dried mango and Mr. Krsipers on the side.

Dressing: 1t agave, 1t dijon mustard, 1t hemp oil and 3t balsamic

For dinner I made some grinders (aka heros, submarine sandwiches) for the Hubz and I which had sauteed onions, peppers, fennel, vegan sausage, tomatoes, lettuce, dijon mustard and Nasoya vegan mayo.

Nasoya sent me a coupon for a free jar of Nayonaise so I tried fat free Nayonaise.  I honestly never was a fan of Nayonaise when I have had it before but decided since it had been years since I last tried it that I would give it another chance.  Honestly though the consistency and the flavor just isn’t very great.  I find that Vegenaise is much more similar to what I remember as mayo. So I have to say this was a sample fail for me 🙁

A Great Start To The B-Day Weekend

The Hubz and I are starting my birthday weekend out right and going to enjoy an ancient spa treatment at Jivana Spa. We are both getting the Jivana Journey which just sounds amazing. I am debating between the Thai Lemongrass and the Ginger Spice- I’ll let you know it goes.  So excited for tomorrow!
