On the 8th Day there was Chocolate

Fearless Chocolate sent me one of their raw chocolate bars to try. Fearless Chocolate has three times more antioxidants than conventional organic chocolate bars. The bars are certified organic, 100% kosher, dairy-free, gluten-free and soy-free. The chocolate unlike many raw chocolates Fearless makes theirs with rapadura sugar. Libre Tea sent me their Glass n Poly tea mug.  This is a great way to enjoy loose tea on the run.  The stainless steel tea filter is surrounded by BPA free polypropylene as is the lid interior.  I have always been a tea lover, especially loose tea however it is not the easiest to make when you are on the run or at work.  Since receiving the Libre Glass n Poly I have used it everyday at work- a huge improvement over K Cup coffee.  Check out my How to Video Below:

On the 7th Day of ….

We all know fruit leathers, most of us probably even like them.  They’re that dependable (and maybe predictable?) flattened fruit snack that’s great on the run.  Usually some sort of berry and apple combination. Matt’s Munchies Fruit Leathers takes the idea of fruit leather and puts a whole new spin on it.

These certified organic fruit leathers come in all sorts of unconventional flavors from Chili Chocolate to Ginger Spice. And hey, they’re even good for you!  There’s no added preservatives, no added oils or salts, and the only flavors with any added sugar are the chocolate ones.  These are a great low calorie snack that will please your sweet tooth at the same time.  They all come in at 90 calories or less per 28 g’s of sugar (most at 70 cals and some as low as 50!).

We received two mixed packs of the fruit leathers that contained the following flavors (starting from my favorites):
  • Choco-Nana
  • Chili Chocolate
  • Banana
  • Apple Pie
  • Ginger Spice
  • Mango
  • Apple-licious
  • Raspberry Delight
  • Island Mango
My favorites were the Choco-Nana, Chili Chocolate and Banana flavors.  The chocolate flavors were amazing and it was pretty hard to believe how low in calories they were.  The banana on it’s own was delicious as well. It had a great flavor to it, nice and sweet, but not too much.

They don’t carry them in Vermont, but I can tell you, it would definitely be worth ordering these online!

On the 7th Day…There were Nuts and more

Nuts Online was kind enough to send us (and one lucky reader!) their Vegetarian Sampler. This sampler gives you a taste of what Nuts Online has to offer from snacks to tea to proteins and minerals.

The veggie chips were a great mix. They had a sweet sort of flavor and made a great snack, especially the green beans! The anti-oxidant mix gave us the little kick we needed making our way around DC in between meals and were full of great nutrients!

The Hubz ate all but one  of the Turkish Figs- he was in love at first bite! He also devoured the Organic Raw Cacao Goji Energy Squares which he said tasted like a fudgey brownie- guess I can be glad he was eating these filled with super foods instead of brownies filled with oil and sugar!

We used the chia seeds and flax seeds in smoothies and on our cereal. And the quinoa was cooked up and eaten with beans and greens- my favorite!

Super Easy Enchiladas

Quinoa and Black Bean Enchiladas

Enchilada Sauce:

  • 1 (150z) can of diced tomatoes, no salt added
  • 2 garlic cloves, minced
  • 1T chili powder
  • 1t onion powder
  • 1t Italian seasoning
  • salt and pepper

Put everything in the blender and blend until smooth.  Taste for salt and pepper.

Quinoa and Black Bean Filling:

  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup of cooked quinoa
  • 1 (15oz) can of black beans, drain and rinsed
  • 1/2T chili powder
  • 1T olive oil
  • salt and pepper

In a large saute pan heat the oil over medium-high.  Add the onions to the pan and saute for 5-7 minutes until translucent.  Stir in the garlic and cook for 1 minute.  Stir in the spices and then the quinoa and beans.  Taste for salt and pepper.

  • 1 cup shredded vegan cheese, 1/2 cup for top and 1/2 cup for filling
  • 8 small tortillas

Assembling:

Preheat oven to 375F.

Pour a quarter cup of enchilada sauce into the bottom of a baking dish. Take 2 tablespoons of filling and a sprinkle of cheeze, wrap and place in the baking dish; repeat 7 more times.

Top with the remaining sauce and  reserved 1/2 cup of cheeze. Cover the baking dish with tin foil and bake for 10 minutes.  Uncover and bake for 5 more minutes until the cheeze is melted and bubbly.  Then if you want to you can turn the broiler on to high and broil for 3-4 minutes until the cheeze melts a little more and is slightly browned.

I know you are all probably wondering what cheeze did you use that melts that well and looks so ooey gooey good? It was Galaxy Nutritional Foods vegan rice block cheeze. I am really weird about vegan cheezes and sometimes have tummy issues with soy based ones  but this rice cheeze was really delicious.  I was shocked to see how well it melted as well as how tasty it was! I also tired the vegan cheeze slices and vegan rice cheeze slices and they were all really delicious as well.  I love how the melt perfectly and they flavor is really delicious. I used the slices in quesadillas, on top of veggie burgers and for grilled cheeze (my favorite).

Nacho Mom’s sent me a sample of their vegan queso to try a little while back and I knew that I was in heaven at the first bite.  You can read my full review here. This product is just amazingly delicious and the best part is:

  • It looks, smells, and tastes like real nacho cheese dip.
  • No dairy or animal products.

  • No guilt.
  • No sugar.

How can you go wrong? It is amazing on chips, baked potatoes, pizza, in pasta for a fun tex-mex dish and about a million other ways you want to try it.
