[Recipe + Giveaway] Omega Acai Banana Ice Cream Oats

August 25, 2016 by Lindsay Ingalls 13 Comments

The post was created as a part of the #GenesisTodaySuperfoods August Challenge.

I am counting down the days to cool crisp weather, hot chai lattes, scarves, boots and Gilmore Girls. Portland doesn’t help with it’s crazy weather either. We have crispy leaves from too much sun, cool mornings but then as soon as noon time rolls around it’s blazing hot out. So this mornings breakfast seems pretty perfect – hot, cold, creamy and packed with nutrients!

Omega Acai Banana Ice Cream Oats -5

To boost things up a bit I decided to add Genesis Today Omega 3-6-7-9. Omega 3-6-7-9 also delivers unique vegetarian sources of essential fatty acids in the oil taken from sacha inchi seeds and rare omega-7 fatty acids derived from sea buckthorn oil. This plant-based supplement also includes a beautiful blend of goji and açaí berry oils. Among other things Omega 3-6-7-9:

• Supports heart health and cognitive function*
• Supports healthy skin, hair and nails*

I like to call this my beauty bowl because of all the omegas and the acai aka the beauty berry. I know it sounds strange to have oats and banana ice cream together but I am telling you it works! The I like to mix everything together and it is a creamy goal of goodness and fills me right up until lunch.

Today is your lucky day though you don’t have to take my word for it you can try it for yourself by entering this giveaway below!

[PNW Adventures] Yurting at Tumalo State Park

As a family with thrive on adventure. We love to get outside and explore the world around us whether it be city or stream, mountain or museum, we just love to explore. One of our most memorable adventures this summer was yurting at Tumalo State Park.

2016.06.19. - Tumalo -15

A few things to note about Tumalo while it is a really nice park those falls that share the name are unfortunately not located at the park but don’t worry they are close by so you can make a morning or day out of visiting them. Other than that I thought the park was pretty great. The yurts are on the newer side and while you need to bring all of your linens and cooking supplies there is a table with 2 chairs, a futon and a bunk bed (double, single) inside the yurt as well as electricity and heat! Outside you’ll find a covered entry way with a bench, a fire ring and a picnic table. It’s a pretty great setup. One of the features of the camp that I loved was the outdoor sinks for washing your dishes – such a nice feature! Also if you are more into tenting or have a camper there really aren’t any bad sites for you!

2016.06.17. - Tumalo 5

2016.06.19. - Tumalo -2

If you head across the street from the camping area you’ll find the day use area that has trails, lots of picnic areas and nice green area with a great spot to wade in the water. Also located at the park is a playground and there are nature paths that you can access right from the camping area. Bonus you’re only 15 minutes from downtown Bend and 20 minutes from Sisters so there certainly isn’t a shortage of things to do!

Now getting a yurt or a cabin in Oregon can be tricky because they seem to the minute that reservations are open. That being said go in see when you can make your reservation and set a calendar alert so you can jump at it. That being said I need to go do ours right now for next summer!

Where are your favorites places to go on adventures? Do you prefer the city or the mountains or maybe the beach?

What To Eat When It’s Too Hot To Cook

August 14, 2016 by Lindsay Ingalls 3 Comments

I don’t know about where you live but here in Portland we have hit a heat wave. I’m telling you I can’t even walk out my front door without instantly breaking a sweat. Who knew the PNW could be so dang hot? Anyways all this heat has me avoiding our stove and oven like the plague. So what does one eat in a heat wave? Smoothie Bowls!

This whole idea of smoothie bowls and acai bowls is not new and it’s actually a culinary concept that I resisted for years but here I am blogging about them now because currently they are my life. They are perfect for any meal and are extremely versatile. Below is my current go-to Acai Smoothie Bowl:

The Trim Protein from Genesis contains a mixture of quinoa, amaranth, chia and other sprouted seeds. It has 16 g of plant-based protein per serving and is packed with superfoods such acai, mangosteen and goji berry. It also contains Garcinia Cambogia a fruit native to Southeast Asia that contains hydroxycitric acid (HCA) which is known to help promote weight loss.

I add the Greens powder because it helps support healthy digestion and daily nutrition. It also contains two of my favorite superfoods spirulina because it contains many essential vitamins, minerals, essential fatty acids and 18 different amino acids and flax seeds an important source of Omega-3 fatty acids. A bonus that this greens powder 25 Billion probiotics per serving, in other words your gut will thank you.

My last superfood add in is Acai 100 because I love to nourish not only my insides but also my outsides. Acai is known to promote healthy skin. I also can always use the energy boost acai provides especially when it comes to spending my days chasing two littles.

goji lemonade 4

This month I have the incredibly opportunity to work with Genesis Today. I’ll be working with them to share recipes using their amazing superfood products. I have been using their products for years so working them is a hugely exciting thing.

I’ve been working on a number of recipes but the first one that came to mind was something light, refreshing and oh so Summer – LEMONADE! I love making all kinds of different lemonades so when I saw that GOJI 100 was one of the superfoods I’d be able to share I was thrilled because this stuff is super sweet and delicious. Perfect for pairing with tart lemons.

I made myself a personal size lemonade but I recommend making an entire pitcher of it for your fridge because one glass just won’t be enough. Besides tasting amazing there are so many incredible benefits from the GOJI 100. Goji berries can be found theHimalayan regions of Asia and is known as the ‘Happy Berry’ – what a great name right!  So think of this as Happy Berry Lemonade – now who doesn’t want to drink something that could make them a little bit happier!

I personally choose to drink GOJI 100 because it is known to supports a positive mood.  There is nothing more in life that I want than to feel relaxed, positive and vibrant.  So cheers!goji lemonade 10

Which is Better? Instagram Story v. Snapchat

August 4, 2016 by Lindsay Ingalls 2 Comments

I thought (like most other bloggers) I would weigh in on the new Instagram Story v. Snapchat. I have to say my initial response was no. Just no. It took me a year to finally fully embrace Snapchat and I love it so why is Instagram coming in and trying to take over.

Image-1-1The thing is though as I have been playing around with Instagram Stories I have come to really like it. I have realized [for me] that Snapchat and Instagram Stories are two different things. Snapchat is a fun way for me to connect, be a little goofy and share a bit of my life to anyone who wants to follow me.

Instagram Stories allows me to filter a bit more of my content so that it focuses more specifically to my followers of each of my [too] many Instagram accounts. If I want to share family things I’ll share it on my Naturally Family, healthy living/fitness/food on RunWithTongs, Essential Oils on Essentially Lindsay, health and wellness coaching on PDXHealthCoach and beauty/makeup on Naturally Lindsay.

Instagram Stories also allows me to connect with a huge range of people who I don’t follow/don’t follow me on Snapchat (I’m lindsayingalls if you do want to follow). I love being able to connect with others so for me this is the biggest selling point of Instagram Stories.

Will I be leaving Snapchat though? NO WAY! It’s such a fun spot to be on and the filters (which yes, I know IG will also have eventually). I use Snapchat to give a little highlight into my day/life. It’s basically my lazy way of daily vlogging.

So both have their pros and cons but it seems that both Istagram Stories and Snapchat have their place in this social media world.

What are your thoughts?

How To Create A Vegan Cheese Platter

July 30, 2016 by Lindsay Ingalls 1 Comment

How To Create A Vegan Cheese Platter

I can tell you ten years ago I would have never been writing this post. Ten years ago the only vegan cheese on the market was vegan cream cheese and some pretty terrible sliced cheese that was essentially processed cheese slices sans dairy. There was no way you could have got me to eat vegan cheese and I certainly wouldn’t be telling you how to put together a great cheese platter. Times have changed though and there are a number of really amazing artisan vegan cheeses out on the market. Currently my favorite brand for the vegan artisan cheese is Miyoko’s.

Miyoko’s Kitchen has create a line of incredible vegan artisan cultured cheeses that have cashews as their base. The flavors range from your mild mozzarella which is perfect for melting on pizza to the tangy Black Ash (one of my favorites). I am also over the moon about Miyoko’s Classic Double Cream Chive which is slightly tangy while also being rich and creamy. Let’s be real they are all pretty delicious.

How To Create A Vegan Cheese Platter

How To Put Together A Vegan Cheese Platter

What You Need:

  • 3-4 Amazing Vegan Cheeses. Look for cheese that compliment each other while also providing a variety of flavors and textures. For the platter I went with the Double Cream Chive (soft, creamy and mild), Aged English Smoked Farmhouse (a bit firmer, a bold sharp flavor) and Country Style Herbs de Provence (mild, tangy and a bit sweet from the lavender).
  • Bread and/or Crackers. You need a vehicle to transport that amazing cheese to your mouth. I like to go with baguette and a mild cracker such as water crackers.
  • Antipasto. I like to add some items from the antipasto bar. In this case sweet peppadew peppers and a few types of olives but you can go with whatever you like.
  • Fruit. I love pears, both red and green apples and grapes. On this day I had some black cherries which were also nice.
  • Spreading Knife.  If you have a little cheese knife that would be great. In my case I have a few spreaders that work wonderfully.
  • A great wooden board.   There is something about a really great wooden board when it comes to a cheese platter. If you don’t have one a big white platter would work as well.
  • Wine. Completely optional but I think a really great wine pairs well with these cheeses. If you don’t drink alcohol try a nice mild kombucha.

How To Create A Vegan Cheese Platter

What are your cheese platter essentials? Have you tried Miyoko’s Cheeses? Do you have a favorite?

Disclaimer: Miyoko’s provided me with a few cheeses to sample. Well we ate them all up before I had a chance to photograph them so of course I went out and bought more so my fridge is now fully stocked. I received no compensation for this post.

#FoodFindFriday | Bontà Natural Artisan Gelato | Ice Cream | Bend, Oregon

July 22, 2016 by Lindsay Ingalls 2 Comments

2016.06.18. - Tumalo 8

A few weeks ago we made our second big trip down to Bend, Oregon for some camping, hiking and gelato eating. Prior to our trip I looked up ice cream shops to visit and Bontà was one of the first spots to pop up. I checked to see what they had for non-dairy options and when I saw flavors such as chocolate coconut, lemon sorbetto, and vegan spiced latte I knew that we just had to give Bontà a try.

2016.06.18. - Tumalo 4

Our first day in Bend we headed downtown and to our delight we not only found the Bontà store front but their was a food festival also going on which included the Bontà gelato cart. After perusing the flavors we decided to get the coconut with Jem nutbutter from the cart and the raspberry sorbetto from the shop. We also sampled the chocolate and the lemon which where absolutely amazing and I have dreams about going back for a scoop of each.

2016.06.18. - Tumalo 7

The dairy-free gelato was smooth, creamy, and incredibly rich. Exactly what I love in a gelato or non-dairy ice cream. I will say we went for a regular size of the coconut with Jem and it was more than we could finish because it was so rich but oh it was so good.

Overall A+++ when it comes to quality, selection and taste and easily one of my most favorite #FridayFoodFinds.
