Weekend Wrap Up

After our 5k run yesterday, in the ridiculously hot and humid weather (76F and 70% humidity), we decided to go on an adventure…..to the movies. We debated between The Change Up, Crazy, Stupid, Love and then ultimately settled on:

After the movies we relaxed at home with a glass of wine for me and a homebrewed pale ale for him.

Today has been a pretty lazy day, which I’ve needed. I spent an hour and half cleaning and reorganizing and then the rest of the day has been spent either cooking or lounging on the couch.

Weekend Wrap Up: Workouts, Weddings and Weeds

This weekend was a fairly lively one that started out with a nice early morning run on Saturday- indoors due to the pouring rain and then a trip to the market.  The farmers market has been disappointing due to the lack of veggies (we live in the North so it’s not really prime veggie growing season) but I did leave with a bunch of beautiful leeks, broccoli rabe, Russian kale, cilantro, parsley, dill, fingerling potatoes, parsnips, chives and green onions. After our trip to the market we headed to Healthy Living to pick up the remainder of our groceries and I snagged this as a new exciting dinner treat:

Following our shopping adventures we came home to the refrigerator repair guy outside our door- apparently he figured out the problem and wanted to rush right over (no calling first).  So he fixed the refrigerator and now my fridge is no longer freezing all my produce! Finally he left and Neil and I could eat lunch and get ready for my cousins wedding.

We attended the wedding and watch a lovely small outdoor ceremony and then headed into the tent (next door) to enjoy the reception.  It was nice to be able to share a special day with my cousin and her new husband as well as other friends and family.

We spent three hours at the wedding and then decided that it was time to make the hour drive back home and get ourselves some dinner since there was nothing vegan at the country BBQ wedding. We came home to a fancy dinner of toast and coconut milk yogurt.

Sunday we spent the morning lounging around the house until Neil and I decided that it was time to do something productive. I got to work on our disorganized closets and moved in the summer close and moved out the winter. While I cleaned the house the Hubz went shopping for more plants and headed to the garden to weed and plant- what a great guy eh’? Since he was out doing all of the manual labor I decided to cook him a yummy dinner with a few ingredients from our little balcony garden (see below).




For dinner I used most of the mustard greens and some cilantro to make these yummy Cauliflower-Mustard Green Spring Rolls (this week’s recipe of the week)

Weekend Wrap Up: Mother’s Day Re-cap!

Yesterday we spent the day with three wonderful moms- my mom, my grandma and my Aunt Carol.  We had an early lunch of (veggie) chili, salad and rolls and then just sat and chatted for a few hours before making our way back home.

Once we arrived home we spent the afternoon relaxing and re-cooping from our allergen overload. For dinner the Hubz was feeling something with an Asian flare so I made stir fried veggies and seeds with brown rice and Asian greens. It was so delicious. For dessert we had dates and mango, yum yum yum.

Weekend Wrap Up: Demo, Party & Not Enough Sleep

From the moment I got out of work on Friday until this morning I have been going and going and going …like the energizer bunny.  However I think someone needs to reload my batteries because the lack of sleep and the running around has made me congested and exhausted today.  Friday I spent the afternoon with the Hubz getting ready for my friend Laura’s Birthday Party, which I hosted last night.  We ran around picking up decorations and food supplies for the party and didn’t make it home until late Friday night.  Once we arrived home we spent a few hours prepping for the party and then finally I crashed from pure exhaustion (key word of the weekend).

Saturday I spent the morning prepping for the party and then I was off to Healthy Living Market to do a demo for Lulu’s Raw Chocolate.  I had done a review for Lulu’s back this past winter and loved their chocolate so when they asked me to do a demo for them I was all over it.  I love this chocolate and was ready to spread the word.  Honestly best chocolate I have ever had and it’s raw, vegan and made with low glycemic coconut sugar.  After my demo I ran home to finish prepping for the party and spend a few minutes sitting down to relax before my hosting duties started.

The party was a great time we hung out and enjoyed appetizers and drinks and laugh (a lot).  I unfortunately only snapped one picture at the party and it was of my veggie and dip platter.  In addition to that we had jalapeno “poppers”, stuffed mushrooms, artichoke dip, cupcakes, Zero Gravity beer and sangria.

After an extremely late night (we didn’t go to bed until 1am) I ended up sleeping in until 10:30 am and woke up congested and still tired.  I ran myself ragged this weekend but it was as great time.  Also it’s a perfect reason to start our new mind, body and soul cleanse this week.  I am not going to reveal all of the details as this is a project I am working on but it is a 4 week  holistic cleanse that helps to create balance, energy and overall wellness.  The first week is the most restrictive and includes eliminating added sugars, soy, gluten and wheat, TV and limits other electronic access (so yes I will still be blogging and checking my email).  It is actually the perfect week to start this because I have to send my MacBook in to get repaired.  I will further discuss my experience with the cleanse during my future weekend wrap ups.

Weekend Wrap Up

Gosh I’m pooped! This weekend has been crazy busy for the us between the massive load of laundry we had to do, blog updates/upgrades and visiting my parents where I had an awful nights sleep. I am about ready to pass out on the couch right now but instead I’m going to finish this post and get my workout in because I know I will regret not doing it even though i’d rather go sleep. Enjoy our weekend in photos (yes it’s all food- what can I say it was that kind of weekend).

Sunday Breakfast Broiled Grape Fruit aka "Royal Grapefruit" (the Hubz thought I said royal when I really said BROILED so now it's Royal Grapefruit)

Yields 4 servings- mix 2T agave, 1t vanilla, 1/2t cinnamon & 1/4t ginger powder together and brush on 2 halved grapefruits- broil on high for 5-10 minutes
