Boo

So after staying up way too late last night researching places to go/stay, we’ve come to the conclusion that it’s just not going to happen this year. We won’t be packing up our beach bags and heading anywhere warm anytime soon. I guess we will just be enjoying some local vacations this year to NYC, Boston and lots of camping.  I am ready for our NYC trip Labour Day weekend though, even though it’s months away.

This morning was pretty unproductive since I stayed up way too late and haven’t been feeling well (bad idea) I am exhausted today and just feeling pretty crummy.  I can’t wait to go home and crawl in my bed and sleep. This morning I had one large coffee at Speeders and snacked on a Odawalla Bar. Then I had to run all over town and find a ‘Get Well Soon’ card per the request of my boss.  I’d never imagined it would be so hard to find a nice card that wasn’t humorous, religious or too girly (the card was for a firefighter).  Finally I found a nice simple one at Barnes&Noble and then it was time to get down to business.

A Cold, Red Curry and A Vacation

I had to take a day off from blogging because I am slightly under the weather.  We had a work meeting yesterday and the place was damp and cold and I came home with a sore throat and a cough.  I hung out in bed all last night and have been lounging around today.  I think my rest, miso soup and fresh green juice has been helping but I’m not 100% yet.  I did get a workout in this morning and a walk this evening with hopes of sweating out some of this cold.

Tonight I made some red curry tonight because what’s better for a cold than something nice and spicy.  Not much of a recipe to tell basically sauteed up some onions and peppers; added the red curry paste; add 2 cups vegan chik’n broth; bring to a boil for 8 min; add bokchoy and a can of light coconut milk; serve over udon noodles.

Now hubby and I are hanging out on the couch with our MacBooks (romantic right) doing some vacation research.  We have almost settled on Costa Rica but are also considering other Puerto Rico and other countries in Central America.  It is a lot of work trying to figure out the place that has everything we want for the right price!

Since we went to dinner last night we didn’t have any leftovers for lunch which meant I had to figure something out this morning.  We had tons of baby bella mushrooms, baby spinach and broccoli so I made some yummy spaghetti with all of those and some garlic, red miso, earth balance, nutritional yeast and salt and pepper.  I made enough so we would have dinner tonight and I won’t have to cook when I get home.  Since there is no microwave in my office and I have to travel to the office next door I decided to have my lunch for breakfast and my breakfast for lunch. Do you ever have lunch/dinner food for breakfast?

Now I’m hanging out at Speeder’s – I know they should just let me move in here I basically pay their rent! HaHa.   I decided to splurge and go with a Sky High Chai which is a soy chai latte with a shot of espresso it is the hubby’s favorite and he is sitting at his desk right now all jealous. Did I mention that we woke up to snow on the ground? GROSS! Where is spring?

Four Hours Just Isn’t Enough

After my morning at the coffee shop it was straight to the office to get down to business with my piles of files to work on.  I was hopping that today I could catch up some organizing but it seems that just wasn’t in the cards.  I spent all morning going and going and going….and I still have a ton to do.  You see I only work four hours a day (on average lately it’s been more like 5-6) and I know you’re saying WHAT that is the life.  Haha I wish it was but it’s really not long enough to get everything done each day and there is constantly something that needs to get done. I also am on call pretty much all the time so even if I’m not at work I might be called to do something.  Anyways, now it’s time to get a snack and hang out at Healthy Living since I haven’t been here all week and I figured they missed me.

Hubby and I decided that we would do our nightly walk down at the Burlington Bike Path after he gets out of work instead of heading straight home. Since we won’t be home until later and I’ve had my yummy yogurt with banana and oats for lunch I needed some greens and a little protein. So I made a little plate of goodness to enjoy while I get some school work done that I didn’t do this morning.

On my plate of goodness is tempeh of the sea, roasted sweet potato, kale and sauteed green beans and a few tiny pieces of chipotle tofu.

How do you balance work, relationships and time for yourself?

Chaos

As many of you know I just started a new job so my life has been pretty crazy the last few days since I am trying to transition from being a “house wife” to going back to the working world.  I am attempting to figure out how to get myself back in the kitchen making interesting, new dishes to blog about as well I have a number of cookbook and product reviews that are on my ‘To Do’ list.  Just a heads up that this weeks blogging will be slightly inconsistent but I am still here!  I just need to figure out my new schedule and adjust to the big changes in my life.

One of the other big transitions is not being at home to make whatever I want for lunch it’s back to planning and packing.  For lunch yesterday I brought:

I had a half portion of dried apricots, dried mangos and habanero bbq almonds- I weighed out the portions on my kitchen scale

Blue Diamond sent me some samples of their products and these yummy nuts were among the mix. I love these! They have great flavor however when I read habanero I expected them to be spicy but they aren’t.

Veggies! lots of carrots, red peppers and cukes!

Lastly some hint water- the grapefruit mango flavor is my favorite
