The Postpartum Meal Service You Need To Try

August 7, 2017 by Lindsay Ingalls 2 Comments

After birth our digestive systems are slower and weaker so it’s important to focus on foods that are easy to digest. Ideally you would be enjoying warming soups, stews and broths that help to heal the body and replenish the body of liquids. As we all know the ideal and the reality do no always aline especially postpartum. We are sleep deprived, riding a wave of hormones and often just trying to survive so food is often whatever is easiest to grab in a hurry. If you’re lucky you’ll have a group of friends or family who can set up a meal train for you so that you are well fed and can focus on healing and bonding.

When it has come to postpartum periods I have learned not to rely on others to help feed us. While we had a few friends drop by food for us [thank you to those two families who did] we were mostly on our own. To prepare I made a number of freezer meals and stocked the pantry with healthy snacks and essentials. I also went in search of a meal service that offered foods that were plant-based, nutrient dense and involved little to know preparation and that is when I found Splendid Spoon.

Okay so Splendid Spoon isn’t specifically a postpartum meal service but it checks off many of my personal postpartum meal “requirements”. Splendid Spoons meals are vegan, gluten free, high fiber, low in sugar and nutrient dense. The best part they are ready to eat so all I have to do is quickly heat them up on the stove (or microwave if you have one – we don’t) or grab straight from the fridge to enjoy.

The Splendid Spoon Program 2.0 has been perfect for my postpartum recovery because it provides 4 smoothies,  4 drinkable soups, 1 breakfast bowl and 6 plant-based bowls. If you were to do the Program 2.0 as a cleanse you would do five days of smoothie or the breakfast bowl for breakfast, a plant-based bowl for lunch and a healthy dinner of your choice. You would end the program with a soup cleanse day which would be all of your drinkable soups and a plant-based bowl – see more here.

Since I am not doing the program as a cleanse I have have done a oats for breakfast, a smoothie as a snack, a plant-based bowl for lunch and a drinkable soup as an afternoon snack along with a healthy fat such as half avocado with a bit of salt and pepper, a handful of nuts or a scoop of nut butter. For dinner I usually had a grain bowl, salad, or pasta.

Let’s get on to what you really want to know….

So how does it taste?

I have been so impressed with how everything tastes. The plant-based bowls have all been really delicious. I absolutely loved the chipotle black bean chili and could have eaten it everyday. I also was so impressed with the drinkable soups and those where by far my favorite off everything. The cauliflower coconut and the celery plant where my favorite drinkables. For the drinkables you can drink them without heating but I chose to heat mine on the stove and then drank from my giant mug- seriously the perfect afternoon snack.

Lastly, there are the smoothies which ranged from delicious to meh. I loved the blueberry coconut smoothie and the cacao almond  but the two that included greens just were not great. I found the texture to be a little off for me so I ended up putting them in a blender with a frozen banana and almond butter which resulted in a delicious nutrient dense smoothie filled with the extra calories I needed for breastfeeding. A side note on that you make sure you are eating enough calories throughout the day and are not just relying on these soups and smoothies [when doing the Program 2.0 as a pregnant or postpartum mama]. Add healthy fats like avocado, coconut and nuts to your meals to help increase calories and keep your milk production up.

and the other thing you want to know….

Is it worth the cost?

Based on my experience it is so worth the cost. I felt at peace when it came to food because I didn’t have to worry about anything. I knew that I was going to have healthy, nourishing meals and snacks and I didn’t have to plan, cook or really do anything I could just grab and enjoy. It also meant my husband could focus on our two older children and all he had to do for me was heat meals up for me. I left the first weeks of my postpartum feeling nourished and my digestion and healing was on point. This has seriously been the easiest postpartum period of my three and I completely attribute that to dedicating the early weeks to rest, bonding, having little to worry about (like making my own meals) and eating foods known for healing and nourishing the body.

How I Prevented Postpartum Sugar Cravings

July 19, 2017 by Lindsay Ingalls 4 Comments

Immediately after Edith was born my sweet tooth went into overdrive. I just couldn’t get enough sweets and found myself binging on sweets all the time. Neil and I got into a terrible habit of making Oh She Glows chocolate chip cookies and we would easily eat the entire batch in less than a day.

After Alder I am honestly having a harder time remembering what my sugar cravings were like but I do remember a few batches of those Oh She Glows cookies making their reapperance.

This time around I have had no sugar cravings. None. It’s been the strangest thing and I’ve actually just been waiting for the craving to hit but rather than craving sugar I feel in control of it. I had a coupon for a free pint of Nadamoo and one bite into the pint and I was over it. Not because Nadamoo isn’t good – it really is delicious but just had no interest in ice cream.

So how did I prevent these cravings?

I truly believe it’s because I changed my eating habits before baby arrived. At my 36 week appointment I was told that my fluids were high and was put on a semi-strict high protein, high veggie, high plant-based fat diet and was told to avoid simple carbs like pasta, crackers, rice, and breads. If you know me you know that my craving for bread and pasta is real so doing this was a huge challenge but I had to do it for baby.

During my last four weeks of pregnancy I avoided my favorite foods (bread and pasta) and stuck to the plan for the most part. I’d be lying if I said that I didn’t have a bite of my kids bagel on our weekly coffee shop dates or that I didn’t have some pretty amazing pizza from Virtuous Pie but overall six days a week I followed my no pasta/bread diet. I even had my four year old checking in on me and reminding me anytime I did go for bread or pasta that I can’t have it. She is seriously my little mama.

So now here I am 3 weeks postpartum and no sugar cravings. I honestly haven’t had any major cravings for bread or pasta either, even though I am now “allowed” to return to my normal diet. While I haven’t been craving it I have had pasta and bread since Ingird was born but not in the quantities that I was eating them previously.  I don’t find myself reaching for them as easily as I once did. I also have NO sugar cravings at all.

So my tip? Look at what you are eating during your pregnancy. Are you focused on whole foods or are you reaching for processed carbs and sugary sweets? If you are reaching for the latter than consider making some adjustments so when baby comes and your hormones are all over the place and you’re in new parents survival mode you can continue to gravitate towards those foods that will nourish your body. Also once baby has arrived make sure you (or your friends and family) keep your fridge and pantry stocked with healthier options like fresh fruit, sweet vegetables and treats that are naturally sweetened. Most importantly keep yourself hydrated and give yourself a little grace. Life is about to be turned upside down so don’t stress about a cookie or five just do your best and focus on healing, and feeding and bonding with baby.

PSST…if you are craving cookies why not build your milk supply while you’re at it and try these cookies.

Eating To Heal The Postpartum Body

June 26, 2017 by Lindsay Ingalls 4 Comments

Immediately after birth digestion is slower and weaker. All those organs that help to process our food have been squished up to make space for a growing baby and then suddenly they have so much space and it takes time for them to heal and adjust.

To help it is important to focus on easy to digest and warming foods. Foods that can be described as soft, soupy, warm and/or mild are exactly what the body needs to heal the weeks following childbirth.

Soupy foods replenish the body with liquids lost during childbirth, warming foods help to nourish and heal and soft foods are easier on digestion and all of these foods can help to prevent the dreaded postpartum constipation.

For the first few weeks focus on broth-y soups, mild coconut curry and nourishing lentil soups. Some great options include:

  • Ginger Lentil Soup
  • Mild Coconut Curry
  • Vegetarian Pho
  • Black Bean Soup
  • Kabocha Red Lentil Curry

Beyond soups and broths it is important to hydrate, hydrate, hydrate. Room temperature and warming liquids are ideal to help heal the body. Great options are water, herbal teas and broths. While you may want to grab coffee or caffeinated tea it’s best to keep those to a minimum at least for the first few weeks.

Additionally focus on healthy fats such as coconut, avocado and olive oil. Healthy fats help to enrich breastmilk and they also are said to boost metabolism, balance hormones and support your mood.

Ultimately the most important thing to do is listen to your body. Your body knows exactly what it needs so listen to it and follow its direction.

PDX Eats | Virtuous Pie

June 9, 2017 by Lindsay Ingalls 4 Comments

Months ago I was watching an Instagram story that featured Virtuous Pie in Vancouver BC. I was seriously salivating over all the pizzas that were featured and then at the end the person made mention that they would be opening a location in Portland OR. Well months went by and I just completely forgot all about it until we happened upon the Portland location when we tried The Baker’s Mark a sandwich shop just next door at SE Division and 12th. Since that day I have been anxiously waiting for Virtuous Pie PDX to open and that day has finally come! This week they had a soft opening and tomorrow June 10th they will have their grand opening starting at 8am with coffee and pastries from Shoofly Bakery.

Tonight we were lucky enough to have the opportunity to stop by and try out a few pizzas and ice creams. I should note that everything is 100% plant-based.The 100% plant-based pizzas combine unique flavor pairings using three-day dough and house-made nut cheeses, including cashew mozzarella, almond ricotta, and non-GMO tofu feta. The full menu can be found here.  If you are gluten-free you’ll be in heaven because most of their pies can be made gluten free and they even have gluten-free waffle cones for their ice cream.

We struggled to narrow down which pizzas to order for our first visit but initially settled on the Meatball & Chevre and the Stranger Wings. To go with the pizza Neil chose one of the local beer offerings and while I wish I could have joined him I decided to start with water. Now I maybe a total geek but I was so excited to see that they had both still and sparkling water for you to serve yourself.

We chose a table outside and within a matter of 6-8 minutes our pizzas were ready and after getting my Instagram shots we dived in and those pizzas were gone in about the same amount of time it took us to wait for them. At first bite we were a bit underwhelmed with the Stranger Wings but the second slice completely changed both our minds and we were sold. It had a bit of spice (although could maybe have used a touch more for my personal taste) and the blue cheese sauce was seriously amazing. If you are from Maritime Canada I would closely relate the blue cheese sauce here to donair sauce. Neil couldn’t get over how close he thought it tasted and we are considering buying up a few sides to have with homemade vegan garlic fingers (again a Maritime thing).

Stranger Wings | Bianca, Spicy Buffalo Cauliflower, Crisp Fried Shallots, Blue Cheese Drizzle, Scallion

Our second pizza was the Meatball & Chevre that came out with a vegan parm that not only looked like freshly grated parm but SMELLED like parm as well. This pizza was packed with so much flavor and we instantly fell in love. The meatballs were so flavourful and lemon herb chevre was like nothing I’ve ever had. Seriously amazing.

MEATBALL + CHEVRE | San Marzano Tomato Sauce, Baerlic Brewing Chorizo Meatballs, Creamed Spinach, Lemon Herb Chevre, Basil, Fresh Parm.

Once we finished these two pizzas we opted to go for a third for one out of pure curiosity and also because neither of us had really eaten much all day. We narrowed it down to three options and ultimately went with the Kim-Jack a Korean inspired pizza. I have to say this wasn’t the one I would have chosen just based on the description alone because while I love Korean flavors I’m not big into jackfruit but it was suggested so I agreed. The pizza came out and it was love at first bite. The jackfruit on this pizza was incredible and combined with the cashew mozza it was even more incredible and ended up being both Neil and my favorite of the three pizzas.

KIM-JACK | Hoisin Crema, Cashew Mozzarella, Kimchi, Gochujang Braised Jackfruit, Roast Brocollini, Scallion

We ate most of the Kim-Jack before deciding to pack up the remainder to go and switching gears to something a bit sweeter. Since we really wanted to full experience we decided to go with an ice cream flight. I left the flavor choices up to Neil and he chose the Double Chocolate & Salted Caramel, Coffee & Donuts and Lavender & Meyer Lemon. All of these ice creams had really great flavor and out of the three my favorite was the Lavender & Meyer Lemon. Next time I’d love to try the Turmeric & Black Pepper and the Marionberry Cheesecake.

The Verdict? If you live in Portland (or Vancouver BC) you need to drop everything and head to Virtuous Pie. One of the best food experiences I have had in awhile and I already have plans go back tomorrow morning for a mug of Heart Coffee and Shoofly Pastries and again next week for a mamas night out so I can try another pizza and more ice cream (assuming this baby doesn’t come first).

Have you tried Virtuous Pie? Which is your favorite pie and/or ice cream?

Five Healthy Snacks You Need In Your Life

May 17, 2017 by Lindsay Ingalls 4 Comments

At 8 months pregnant snacking is an essential to my everyday life. Things are getting really crowded which means those big meals I once preferred have turned into small meals with snacks in between. I always have to have a snack on hand because if I don’t this mama gets hangry real fast and you don’t want to be caught in cross hairs (just ask my husband). So what snacks have been keeping me happy and satisfied right now? Keep reading to find out.

Simple Mills Crackers. I am telling you friends that these crackers are addictive. I have been ordering them off Thrive Market* for months now and my family and I go through them as soon as they show up at my door. Luckily I just found the mega boxes of them at our local Costco so instead we can go through one club sized box in a day instead of one of those tiny regular size boxes.
Kombucha.  My first pregnancy I was far too worrisome to indulge in kombucha but this third time around it’s a staple. It satisfies my desire for a special effervescent drink and it also helps keep my digestion in check. Don’t worry I rarely drink an entire bottle because I have two small children who are addicted to kombucha and like to “help me” drink it whenever I open a bottle.

Chocolate. When I speak of chocolate though it’s not just any chocolate it has to be Hu or eatingEvolved. These chocolates are both paleo and vegan and don’t contain all those extras that you just don’t need. I purchase both on Thrive Market because it’s the best deal that I have found and while the Hu can be a little pricey anyone who has had it will tell you it’s worth it.

Goodbites Date Cookies.  No surprise here another Thrive Market find and no I’m not sponsored by them I bought my own membership and I shop via their site regularly because I find that it has the best prices and it’s delivered straight to my door. Anyways back to the cookies. These little date cookies are another household favorite and the best part these little treats are raw, organic, vegan, gluten-free, and non-GMO. Based on all of those details they really shouldn’t taste as good as they do but they are delicious.

Better Beans (on toast). If you were to ask me what my one pregnancy craving is this time around it is beans on toast. Specifically Better Beans and even more specifically the Skillet Refried Red Beans. I had a very similar craving when I was pregnant with Edith however it was beans on brown rice tortillas with Vegenaise. I don’t know what it is but I could eat this for breakfast, lunch and dinner (and have been known to).

What are your favorite snacks right now? Are you a sweet snacker or a savory? In general will gravitated towards savory foods but I do love a piece or five of some really delicious dark chocolate.

PDX Eats [‘Burbs Edition] | Sharky’s Woodfired Mexican Grill

October 25, 2016 by Lindsay Ingalls 2 Comments

2016-09-19-sharkys-6

Disclaimer: Sharky’s provided me with a voucher to try their new location. I was not compensated for this post and I was not required to write a positive review. All opinions are my own.

When it comes to eating out I tend to stick to local spots in Portland. I love to support local businesses, the ability to know where my food is coming from and unless we are traveling I don’t spend a ton of time in the ‘burbs. However there is the occasional time I cross the river and head out of Portland and when I do I need a go to spot to eat.

I feel like I have been searching for places that not only have great plant-based options but also quality of food and finally I have another great spot to add to my list – Sharky’s Woodfired Mexican Grill. Sharky’s does their best to source organic, natural and local ingredients and they have so many plant-based options!

2016-09-19-sharkys-7

Before heading in to give them a try I did a little research regarding plant-based options and they actually do a pretty great job of labeling items on their menu. I also found that The Veganista Foodie had put together a pretty great cheat sheet as well – which I of course used.

We started out with chips and guacamole and of course took advantage of the salsa bar and tired just about every salsa available. I could have eaten a bowl of the guacamole and those chips – so good!  While we waited for our meals the kids also munched on their mini churros which were okay but a bit too crunchy for their liking.

2016-09-19-sharkys-9

For meals the kids shared a kid’s bowl with organic tofu, organic brown rice and organic beans and a kid’s power plate with organic tofu, organic brown rice and organic yams. The went nuts for the tofu and while they weren’t so much into the yams Neil and I thought they were fantastic. In order to waste not I took the yams home and added them to a vegan mac and cheese and of course the kids gobbled it up.

2016-09-19-sharkys-3

As for the adults we shared the organic tofu and veggie burrito and an organic tofu and veggie taco plate. The burrito was massive and we could have easily just shared it because it was so much food. The veggie taco plate was delicious as well; we both loved the tofu and the veggies were cooked perfectly. Overall we were super impressed.

2016-09-19-sharkys-2

We don’t head to Tualatin very often but I have to say Sharky’s might just have me visiting a bit more often. Our trip also took us to a spot we had never visited before and we ended up visiting a nice New Season’s and discovered the Tualatin ArtWalk. So mini trips to the ‘burbs are proving to be a bit more delightful.

2016-09-19-sharkys

What are your favorite restaurants in the ‘burbs? Have you ever been to Sharky’s? If yes, any favorites?

We have crispy leaves from too much sun, cool mornings but then as soon as noon time rolls around it’s blazing hot out. So this mornings breakfast seems pretty perfect – hot, cold, creamy and packed with nutrients!

Omega Acai Banana Ice Cream Oats -5

To boost things up a bit I decided to add Genesis Today Omega 3-6-7-9. Omega 3-6-7-9 also delivers unique vegetarian sources of essential fatty acids in the oil taken from sacha inchi seeds and rare omega-7 fatty acids derived from sea buckthorn oil. This plant-based supplement also includes a beautiful blend of goji and açaí berry oils. Among other things Omega 3-6-7-9:
