Is it really already Thursday? The days just flow together lately and time seems to be passing so fast. Last night we were able to get the munchkin down fairly early so Neil and I actually had time to eat dinner together, talk, enjoy a small glass of red wine (oh how I missed you) and caught up on an episode of White Collar.
Although we had a pretty good evening we woke up this morning with a cranky, gassy baby. To help make it through the morning I decided that coffee was a must have and Neil and I tried the Chameleon Cold-Brew (FYI I can’t stop singing karma karma karma chameleon every time I think about this coffee) I received yesterday*. I debated trying a few of the different recipes that were sent with the coffee and ultimately decided to make Neil and I the Southern Hemisphere.
This was the perfect coffee drink to get me started this morning. I was expecting it to be a lot sweeter than it was but was happy to find that it was just the right balance of flavors and sweetness for me. Tomorrow morning I think that we are going to try a variation on the peanut butter cup coffee drink recipe using the Chameleon Cold-Brew.
Once I was fueled up with a good breakfast and coffee it was time to take on the cranky baby (so thankful to have Neil working from home this week and next). I could tell Edie was getting tired by her big yawns, bating eyelids and tugging at her ears. I tried bouncing her, swaying her, rocking her and every time I thought she was ready to be put down she would let out a big wail when I tried so I moved on to Plan B the Boba Wrap. She was a little fussy at first when I put her in but a few minutes of bouncing on the exercise ball and she had passed out and I was able to take on some freelance assignments and read a few blogs.
Now it’s afternoon and I have Edie lounging in her Boppy Infant Lounger and I am getting ready to take on the task of figuring out what to make with our CSA veggies this week. Here is what we got along with some garlic and cucumbers that I forgot to take photos of.

Pantry Clean Out
Today between nursing, cuddling and changing poopy diapers I have been working on taking stock of what we have stored up in our pantry. Since becoming a stay-at-home/work-at-home mom our budget has taken a little bit of a hit considering I now do not have a consistent monthly income and am only doing freelance work. As a result we have to make few changes when it comes to dining out and grocery shopping. Long gone are the days of leisurely dinners out ordering whatever we’d like and enjoying expensive beers. Also long gone are the days of filling my shopping cart with most anything that my heart desires.
So now it’s time to get back to meal planning and to do that it all starts with evaluating my pantry first. Here is what I found:
So now I need to figure out what to make with all these ingredients! We have our CSA coming today and although we are able to pick the 10 items that we want it doesn’t always workout that we get until it arrives (and honestly I forgot what we picked besides heirloom tomatoes and tomatillos).
So now I am looking for your help- what should I make with the ingredients we have?
CSA Week 3
This week our CSA was filled with many of the same items that we have received the past two weeks. The new items we did receive were tomatoes and napa cabbage, however the cabbage was in rough condition. The cabbage has been eaten to pieces by bugs and was actually thorny to the touch- has anyone else experienced this before? Needless to say we weren’t too impressed and contacted our CSA farmer regarding this.
I don’t have any huge plans for the veggies this week, except to use them up as quickly as I can since (fingers crossed) we will be at the birth center for a few days (hopefully). This morning I am planning on making TLT bagel sandwiches and green juices for Neil and I, which will use lettuce, tomatoes, collards or swiss chard and the cucumbers from last weeks share. Neil is also working from home today so I will make a veggie packed lunch- maybe a curry noodle? Then for dinner who knows- something with more veggies!

CSA Week 2
This week our CSA was a little less greens heavy and a little more veggie heavy which I am happy about. I love my greens but due to the heat last week they didn’t last very long which meant rather than getting cooked up or put in a salad they were juiced.

Kohlrabi
I haven’t experimented with kohlrabi that much but in the past we have had it raw in salads, cooked up in stir fries and in this root vegetable curry dish.
Snap Peas
Garlic Scapes
I love to make pesto with garlic scapes and I plan on making a nice big batch tomorrow.

Summer Squash
I am a huge fan of summer squash. I like to keep it simple and just saute or roast with a little olive oil, salt and pepper but sometimes I like to get a little more creative and make dishes like my recipe for my Italian Almond Tart

Green Juicing
Morning green juices have become a regular thing around our house for the past few weeks, we have one about 4-5 mornings out of the week. We finally have lots of local greens and our CSA to fuel our green juice habit. My favorite green juice this week was filled with collards, carrots, cucumber, lemon and apple.

CSA Week 1
Today marks the first week of our CSA and I am so excited to show you our goodies and hopefully a few recipes over the next week. This year we decided to do a different CSA, unlike ones in the past where we sign up and get whatever they have to give us that week, we actually get to choose our produce. On Sunday night we can log-in into the CSA website and choose 10 items from the list they provide.
This week we chose to get:
Dino Kale
Red Kale
Green Kale
Rainbow Chard
Collards
Lettuce, but requested cucumbers (more on that below)
Broccoli
Snap Peas
Summer Squash
Zucchini
We had originally requested cucumbers but since it was most likely a popular item we didn’t end up getting our first choice and were given our second choice of more greens- in this case lettuce. The other great thing about our CSA is that after you make your choices you can purchase additional items (if available).
The plan for our CSA goodies is to saute or roast the zucchini and summer squash, saute the snap peas in a recipe and cook up or juice the greens.
