Winners of the ABC Cookie Giveaway

The winner of the Double Chocolate Decadence Cookie is Jason G with his entertaining cake baking story: “I have a couple, but I’ll go with the semi embarrasing one. I was making a vegan cake for my wife’s birthday. It was a chocolate cake with raspberry filling with a splash of vodka. The two layer cake came out fine, cooled them, set them up for filling. I mixed up the filling and put it on the first layer. Finished the second layer and frosted it with a chocolate frosting. Time for the refrigerator. Well, I come down a few hours later to make sure the kids haven’t sampled it and something happened right down the middle of the cake. There was a gap and now the cake looks like a chocolate frosted rear end. My wife said it tasted great, but I still felt bad about its appearance. Ah well”

and the winner of the Colossal Chocolate Chip Cookie is Sara with her veganizing chocolate chip cookie story: My favorite baking memory is a recent one. I am a new vegan and a single mother of two; a 9 year old boy and a 15 year old girl. Thankfully both of my kids are food adventurous otherwise this past year of vegan transformation would not have happened. The kids and I have missed regular old just like mom used to make chocolate chip cookies. We had the family recipe and had tried, not less than 10 times to convert the recipe into a yummy vegan version. It just wasn’t that simple! We ended up with bitter hockey pucks, small hard balls, dry hallow-ish puffs. All of them were awful and most of them ended up in the trash. Along with our hopes of ever making a vegan version as good as my moms.
I was not to be defeated. My kids and I deserved chocolate chip cookies, right? We were trying again and the three of us talked about what we thought was wrong in the past. We discussed small changes to the recipe again. No milk. No eggs. All of the basics. We then decided the cookies were too dry and we made modifications for that. We took turns mixing. My son in his petit chef apron. It looked good and smelled great. We made a pan for the oven and watched like hawks as they baked. The house was full of the yummy aroma, that I remember from my own childhood. They were ready. Excitement and our hopes were on the line. All three of us could hardly wait. I bite into the puffy roundish vegan choclate chip cookie and I am transported to another era in my life. I look at the kids and everyone is all smiles.
Triumph!”

Who doesn’t love cookies? Especially when they are vegan, I know I do.  I was sent a few samples of ABC cookies which I love but decided that hubby and I really shouldn’t eat all three of them so we kept the oatmeal raisin for ourselves and it was delicious!  Nice and fresh and hearty how can you not love it?  My husband is also a big fan of the Snickerdoodle which is another great flavor, I love the sweet and cinnamon flavor of it.

I Actually Cooked!

For the first time in awhile I actually spent some time in the kitchen cooking some real food. My husband and I are going camping for the next few days and I wanted some fun food for us to eat. So last night, with the help of hubz, we made from Vegan Brunch: Cinnamon Rolls, Chesapeake Tempeh Cakes and Samosa Pancakes!

Dr. Kracker Review

I am a cracker lover and have been forever and I usually go for something thin and crispy but I finally tried Dr. Krackers crackers and flatbreads and they are hearty, crispy and yummy. They go really great with your favorite hummus.  The flatbreads are great with Tofutti and Tofurky with a slice of tomato.

These crackers are much more filing than your normal crackers such as wheat thins, saltines or ritz. My favorite of these crackers is the Seedlander which has tons of pumpkin seeds- a great source of zinc. I love how Dr. Krackers crackers and flatbreads are hearty with lots of seeds that make them filling.  At your next cocktail party place these on a plate near some hummus, tofuspread and/or vegan cheese and enjoy!

Rustic Crust Pizza Review

A few weeks ago my husband and I were lucky enough to come home to a big box sitting on our porch.  The box was filled with Rustic Crust Pizza and sauces, 6 different kinds of crusts and all of them vegan.  We were delighted to get to test them all out since we are pizza lovers.

The first pizza we made was a vegan chicken parm pizza on the sourdough and it was delicious! The crust is great and easy and fresh- all you have to do is brush with olive oil, top it and place in a 450F oven for 10 minutes and dinner is served!

Our second pizza that we made was a caramelized onion with tomatoes and mushrooms and it was by far one of the best pizza’s.  We used the Thin Crust which is definitely my favorite; it get’s nice and crispy and is just a great crust.

Another pizza we made (my favorite) was  the Mexican pizza on Pizza Originale Crust.  We topped it with refried black beans, sautéed onions and mushrooms and fresh salsa.  This was great and the crust was nice and crispy and was overall the best pizza that we made.

The three other crusts we had my parents and my aunt and her family test out as we had our fill of pizza for a while (as much as I love pizza 3 in one week was enough).  They loved the crusts and the pizza sauces.

Overall these are great crusts and are fresh and yummy.  Any time you need a quick go to dinner grab one of these crusts, there are tons of different flavors and even personal sized ones!

Banana-nut Muffins

Yesterday my husband comes to me asking if we have everything for banana bread because we had 3 very over rip bananas that were going to go to waste. I decided why not make banana-nut muffins so much easier to grab and go.

Banana-nut Muffins

1 and 3/4 cup self rising flour
1 tablespoon baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 cup natural sugar
3 very ripe bananas, mashed (about 1-1/4 cups)
1/2 cup unsweetened soymilk
1 unsweetened applesauce cup (you know those ones you pack in lunches or ¼ cup applesauce)
2 tbsp. agave nectar
1/4 cup chopped walnuts

Preheat the oven to 400F and spray a 12 cup muffin pan with non-stick spray. In a bowl mix together the flour, baking powder, salt, and cinnamon. In another bowl, mash the banana with the sugar, soymilk, apple sauce, and agave nectar.

Pour the banana mixture into the flour mixture and stir just until combined. Fold in the walnuts, and pour into 12 muffin cups- I like to use an ice cream soup. Bake for 15-20 minutes, until a toothpick comes out clean.
