Coffee, Oatmeal & Long Trail Plans

This morning had a pretty lazy start to it but now that I am looking at the clock I realize I have to make this quick and get ready for work.

I made the Hubz and I some oatmeal and coffee to start our day.  In today’s mix there was Scottish Style Oats, chia seeds (which you can now buy in my OpenSky shop), cinnamon, stevia, banana and Justins Chocolate Almond Butter.  I love almond butter and what a treat it was to have some a touch of chocolate with it!

To go with our oatmeal I made some of my favorite Kicking Horse Coffee in my Bodum Brazil French Press which is another item that is available in my new OpenSky store. In my last post I went through my process of making coffee using a french press but if you have any questions let me know!

The Hubz and I spent the remainder of the morning looking over this:

We have been trying to get out and do a few day hikes here and there so we were trying to decide where we would go the next two weekends. This turned into a discussion about where we should go for our week long hike next summer; yes I have been convinced to do a week long hike and I’m pretty excited about it. At this point it is a matter of picking up the supplies that we need over the next 9-10 months.

Late Lunch

I was starving when I got home from work today because oops I forgot my lunch! As I was driving to work it hit me my lunch is sitting at home on the counter, boo!  At work I snacked on a fruit roll up and some pretzels from our snack stash as well as lots of water and cup of tea.  When I got home I was so excited to get some food in my belly and also grateful I get out of work at 2pm.

I have a million things to do this afternoon and then out for a drink with a few girlfriends who are in town from Brooklyn and Denver.  Also reminder my OpenSky Shop opens tomorrow! Can you guess what my first product will be?

Girls Weekend Part 3: Nourish Restaurant

The girls and I went to Nourish in Lexington MA for dinner last night.  The restaurant prides itself on being responsibly sourced and respectfully priced we are working with area farms and other small businesses to work as much local and organic food into the menu as possible.  It also is vegan friendly which obviously made this place extremely appealing.

Laura and I started with a glass of the house white wine which was delicious!

Then we shared the rice paper rolls which were filled with Asparagus, seaweed salad, red onions, toasted sesame sauce & cucumber salad. These were really good; the sesame dipping sauce completely made the dish.

Finally it was time for the entrees: Laura loved her black bean burger and Monica enjoyed her stir fry;  Although mine sounded good it definitely wasn’t great.  The tempeh sauce was a little salty and the dish was well…missing something….like um a vegetable! Over all things were good.
