Cashew-Pea Pesto
- 2 cups shelled sweet peas
- 1 bunch garlic scapes, chopped (approx 1-1.5 cups)
- 1/2 cup cashews
- 2 tablespoons nutritional yeast
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup extra virgin olive oil
Tequila Lime Veggies
- 2 small patty pan squash, thinly sliced
- 1 medium onion, chopped
- 1/2 bell pepper, chopped
- 2 garlic cloves, sliced
- 1 jalapeno, sliced
- 1 shot of tequila
- 1 lime juiced
- salt and pepper
