I’d make oven-roasted gnocchi in a rich tomato sauce!
Pizza, first and foremost, pizza. Then maybe bruschetta. Or if I was feeling brave, tamales. 🙂

I’d break out my pasta maker and have a wonderful dinner!
This isn’t terribly interesting or exciting but I would make salad dressing with the olive oil! My food budget does not have room for high quality oil. The stuff i buy is totally fine for cooking but you really can taste the difference on a salad!

I’d probably use the tomatoes to make a pasta sauce for either spaghetti squash or real pasta and the olive oil to make garlic bread.
I’ve been meaning to make some chilli for a while now that it seems it may be getting chilly for good in Northern VT!
With the sauces, I would try out a vegetable lasagna or baked ziti!
I would make vegetable dishes with the olive oil!

I just liked Running with Tongs on facebook!
Pasta with sauteed garlic, mushrooms, etc. in extra virgin olive oil, topped with Parmigiano Reggiano..
Hmmm…..we used to use that brand. I would probably gift it to someone that does not usually use such a good olive oil.
i’d definitely make some version of a pasta dish.
