I would make a simple tomato sauce or tomato soup with the ingredients. Anything that would allow the tomatoes to really shine would be fabulous.

I would use the tomatoes in my veggie chili and I would use the olive oil just for dipping some crusty french bread (which is a easy and fantastic appetizer for holiday parties!).
