We have been having miserable weather this week in Vermont so I started my morning off with some light, refreshing and uplifting, a green smoothie! This smoothie had unsweetened vanilla milk, vanilla hemp protein powder, half a banana and 2 huge handfuls of spinach.
After a busy and stressful day I was ready to come and make some comfort food. I found daiya at Healthy Living and decided that I had to purchase some since everyone has been raving about it. I also picked up some of my favorite low-carb tortillas that only have 45 calories each so they make tex-mex food guilt free. I stuffed the tortillas with roasted sweet potatoes, sauteed mushrooms, onions and spinach. I then topped with salsa and daiya and baked until bubbly. I then topped these yummy things with avocado-tomato salsa that I had made- HOLY YUM!

I love Daiya cheddar. I don’t eat it all the time, but it’s perfect to top anything I want to make cheesy!! For me, it’s easy to use “too much” because a little goes such a long way. Oh, and the new Amy’s Mac and Cheeze with Daiya is divine!

Definitely Daiya! For sprinkle cheese, I’m still partial to Galaxy Nutrition’s Vegan “parm.” So glad you find/liked Daiya…

Follow your heart is my favorite so far, but I haven’t tried Daiya yet. I like to eat it in grilled cheese sandwiches or plain, or on pizzas… on basically anything.

Daiya has totally stolen my heart! LOVE THAT STUFF! So far, my favorite way to eat it would be on pizza (the Italian shreds) and grilled cheeses (with the cheddar).

I LOVE Daiya shredded mozzarella. But I just bought some of their cheddar, and haven’t tried it yet. I did however get a sample of Teese’s mozzarella and tried it in my calzones last night and I’m totally sold on that as well!!
